The link between rice and diabetes has been highlighted. A paper published in the British Journal of Nutrition indicates a clear link between eating refined rice and the prevalence of type 2 diabetes .
The study aimed to link dietary carbohydrate and diabetes, and was carried out involving almost 1,850 participants. These participants were tested for diabetes, and had their diet recorded. The researchers adjusted for other diabetes risk factors such as age and BMI.
Dr. Mohan was reported as commenting: "What we found was, as the amount of rice consumption increased, the consumption of other food items, like fruits and vegetables, legumes and diary products became less. We found a link not just between carbohydrate consumption and diabetes but the kind of carbohydrate consumed and its effect. Another interesting finding was that as the increased intake of rice was at the cost of other food items."
