Hiya. I've been diabetic for about 22 years and have recently decided to give the whole low carb thing a serious go. I've always been careful with regard to how many carbs I eat, but there is a definite room for improvement. I'm gettin married next year so have decided that now is the time to really try the low carb diet and, hopefully, lose a few pounds.
I am vegetarian, which makes things a little more difficult but certainly not impossible. I also have coeliacs disease, which means I cannot eat anything with gluten (oats, wheat, rye and barley) in it.
I'm only five days into the low carb plan and I am already getting bored. I'm having eggs or yoghurt for breakfast, salad or low carb soups for lunch, dinner is usually soup, omelette, pastry free quiche with veg, rice etc.
Anybody got any more exciting low carb, vegetarian, gluten free recipe ideas that I could try?
I'm still having fruit each day as I feel I need it - honestly feel lousy without it! Any suggestions would be welcome!

It's only as stressful as you want it to be Emma, my wife and I just got married in a registry office and had a small family celebration afterwards, both of us couldn't be bothered with the expense and aggravation of a big wedding day.

Hi emma
I make veg lasagne sometimes but instead of using the pasta sheets I use layers of celeriac and aubergene and make a very cheesy sauce sometimes adding a little crumbled blue cheese on top. The veg I use varies but could be red green and yellow peppers ,courgette ,.onions, leek. and tinned toms (watch the carbs)or fresh toms and basil .Serve with crispy lettuce and cucumber.You could use a similar mix for bolagnase using caulli instead of spag.

I was veggie for a few years, but I did find I got really bored with low carbing as one. I gave in and addded some fish.
Soups are good, loads a veg easy to make and freeze well.
For brekkie, berries with yogurt and flax seeds (ground), pumpkin seeds. Omlettes with mushrooms, cheese peppers etc.
Curries are good to make with green beans and mushrooms. They freeze well too.
Salads of course but with loads in, I make mine with avocado, seeds, eggs etc. I sprout my own seeds and add them also. I do like a fry up now and again in butter with mashed swede or turnip and cabbage.
Going to experiment with bread made with sourdough (its more GI) something to do with slow releasing, but I will use spelt flour.
I will add some of my sproute seeds to it.
I can get away with a couple of slices of Burgen at lunchtime and have it with cheese butties, or on toast with a bit of ketchup.

Thanks for the suggestions, guys. Carol - I love your lasagne idea. Might give that a whirl tomorrow. Why can't losing weight be as easy (and as much fun) as putting it on?!

Oh, how I wish!
Rose Elliott wrote a low-carb book for vegetarians some years ago. Try Amazon. Or just Google "low-carb vegetarian" and see what happens?
