Been away camping so food was all over the place and my BG up a bit, but on the whole getting back into the swing of things, I still find it great to see what eating, I do find it hard loving cheese, but it does not agree with me!

B almond/coconut milk blueberrie shake - one spoon protein powder
L: Quinoa Salad with a few chopped up walnuts
S:veggie samosa!
D: black bean mushrooms with large green salad
S2!: crackers and cheese
The black bean mushroom is simple and easy to use can make 3-4 portions - light cook onion, pepper (capsicums) finealy chopped cook in a little bit of water, stock oil etc add in 1 tin of black beans (drained) lightly mash with back of spoon still want some to keep their shape then add 1 spoon of tahini, salt pepper chilli flakes dash of lemon or lime juice. then spoon onto large flat field mushrooms and top with a few chopped nuts of your choice then grill till nuts are lightly toasted. (I pre part cook the mushroom) the left over I pop in the fridge can keep up to a week
