Fruit flan

Base:
100g ground almonds
50g butter (melted)
1dsp cocoa
Sweetener to taste 1/2tsp?

Filling:
500g marscapone cheese
1 tsp vanilla extract
Sweetener to taste 1/2tsp?

Topping:
Mixed berries of your choice

Making the base:
Mix almonds, cocoa, butter and sweetener. Press in bottom of a 9” small flan dish. Place in fridge.

Making the filling:
Mix all the filling ingredients together. Spread on base now cover with topping.

These are the only crackers I have ever made courtesy of the lovely Ewelina, I'm sure she won't mind me posting them for you!

Almond Crackers
Ingredients (make 24 crackers):
150g ground almond
1 egg
1 tbsp. olive oil
½ tsp. salt

Preparation:
1. Preheat oven to 180C
2. Combine ground almond with salt
3. In a little bowl combine egg with olive oil
4. Add egg mixture to almond mixture and combine together.
5. Add some herbs or spices if you like. I added a bit of grated cheese but they taste great plain as well.
6. Roll the dough between 2 sheets of baking paper. Remove the top sheet and cut out the shapes you like. It can be squares or circles (I used shot glass to make mine). Squares are easier to make as you don’t have left over dough and don’t need to repeat the process of cutting.
7. Bake on baking paper for about 10-12 minutes.
8. Let the crackers cool down and serve with cheese or just plain.

Today I added some chilli flakes during the mixing process, rolled the mixture so it was very thin, then cut it up and deep fried the 'crackers'. Ladies and gentleman, I give you....low carb nachos :)

Haha I take it you approve then :) These were delicious, had them with some home made chilli for tea, BG went up by 0.3 :woot:

Family fave:
Sausage and lentil casserole
12 sausages
2 packs of Puy lentils (ready to eat ones)
3 peppers
3 handfuls of carrot batons
Garlic butter
400ml stock
Gravy granules
Seasoning

Set oven to 200 degrees c.
Fry sausages in oven proof pan until they get some colour. (You will need a lid.)
Chop and add veg.
Add garlic butter.
Fry for couple of mins.
Add everything except the gravy granules.
Pop in oven for 30 mins.
Add some gravy granules to thicken sauce.
Eat and enjoy!

Chilli

1 onion
Garlic butter to fry onion in
1 red pepper diced
1 heaped tsp hot chilli powder or 1 level tbsp mild chilli powder
1tsp paprika
1 tsp ground cumin
½ tsp dried marjoram
500g mince
1 400g tin of kidney beans
400g of pasata
2 tbsp tomato purée
1/2 glass of red wine
Salt and pepper
Square of dark chocolate
Soured cream and grated cheese.

Dice 1 large onion and fry in garlic butter, stirring fairly frequently, for about 5 minutes, or until the onion is soft, squidgy and slightly translucent. Add the red pepper, 1 heaped tsp hot chilli powder or 1 level tbsp mild chilli powder, paprika, ground cumin and dried marjoram. Give it a good stir, then leave it to cook a couple of minutes.
Add and brown the minced beef. Add the rest of the ingredients and simmer for 30 minutes with the lid on.
You should check on the pan occasionally to stir it and make sure the sauce doesn’t catch on the bottom of the pan or isn’t drying out. If it is, add a couple of tablespoons of water and make sure that the heat really is low enough. After simmering gently, the chilli should look thick, moist and juicy.
Leave the chilli to stand for 10 minutes before serving.
Serve with soured cream and grated cheddar.

A take on snickers
200g butter
200g peanut butter
200g coconut
4dsp cold black coffee
Sweetener to taste

Chopped peanuts to roll in.
Put everything but the peanuts in a food processor. Put in fridge to harden then roll into balls and roll in the peanuts.

Yes! They're very filling! I ate one after a bowl full of the chilli and wished I hadnt. I'm so full I could do with a walk! They are rather nice though but you might want to half the quantities and keep them in the fridge! :)

Did you cover it with sour cream and grated cheese? I got carried away and made double portions so we had it Sunday and Monday! Shame!:rolleyes:
Glad you enjoyed it! My youngest complained bitterly!

Choc mug cake
Individual chocolate pudding

Recipe makes 2

50g butter, melted in the microwave
3tbsp ground almonds
1 1/5 tbsp sweetner
1/4 tsp vanilla
Pinch of salt
1 egg
1 tbsp cocoa powder
1/2 tsp baking powder
2 squares 70% dark flavoured with orange chocolate
Or
1 square 90% chocolate, chopped
2 tbsp pecans

Melt the butter in a bowl, add remaining ingredients and divide into 2 mugs and nuke for 1 minute per mug.
