Three minute quiche has become a favourite of mine .
Take one or two eggs and beat them together, add a dash of skimmed milk and a handful of fresh spinach or celery or leek or any preferably low carb veg and mix together with a sprinkling of grated cheddar and seasoning in either a large mug or one of those microwave small plastic pans .Top with a broken up crispbake as a base .I use Tesco dutch crispbake at 6.5 grms carb and microwave for 3 minutes .Delicious low carb quiche with salad .
