I decided to try celeriac mash a couple of nights ago and very nice it was too. What confuses me is that on researching it I find that some sites praise it to the heavens whilst some say eat in moderation and only occasionally, I`ve seen a GI load quoted as 35 for raw 85 for boiled. So the question is: celeriac- thumbs up or down? a regular ingredient or an occasional treat? I know some of you on here will know so thank you in advance for your advice.

My Collins Gem GI book says the fleah of celeriac is low GI whether raw or boiled and give 2.3g and 1.9g of carbs respectively for a 100g portion. The web site www.nutritiondata.self.com says something very similar. That sounds pretty okay to me.

for a variation steam celeriac , cauliflower , and some leek-- very low carb and absolutely delicious mashed together

Celeriac - 30g cooked has a low GL & 1g of carbs, 90g raw is also low GL & again 1g carbs, according to Winnie Chan's Gi & Gl counter. So it's a thumbs up for me.

OH did almost the same tonight but Jerusalem artichoke instead of leek mashed to replace spuds on cottage pie. Yummy.

Most important is how you get on with the celeriac - use your meter to check how you react to it, then you'll be able to work out how much/often you can add it to your good to eat foods.

And celeriac tastes more like parsnips than celery to me!
