Recipes for cakes and biscuits

I used to make my hubby all sorts for cakes but now he has been diagnosed type 1 , I'm not too sure what to make him. Any ideas would be greatly appreciated as he deserves a treat now and again

Could you tell me where to get xylitol, I have canderel in granulated form, would that be ok to use?
The recipes all sound lovely, I'll defo be having a go at some of those. Thank you x

I buy it in health food stores such as Holland and Barrett or waitrose. You can buy it easily online too. I use a coffee grinder to powdered it. It dissolves much easier if you grind it
