I tend to shallow fry fairly thick slices quite slowly in a lot of olive oil. Garlic barely gets cooked as I find it burns easily and becomes bitter.... over all.... heavenly... who needs meat?
I made this recipe:

but I couldn't fit all the aubergine in the dish so I have some griddled slices in the fridge I plan to eat rolled around mozzarella and rocket.
