What sauces do people make?

I find that a spoonful of peanut butter, splash of soy sauce and double cream is a great easy sauce.

Equal quantities mirin and soy sauce (watch the sugar in the mirin)
Knorr stock pot, worcestershire sauce and herbs

Curry sauces (i usually use Pataks)

Herbs (e.g. Dill and cream, or tomato and Basil)
Pesto
Endless mayo variations

Quick and easy either hot or cold (I also sometimes used Greek yoghurt instead of the sour cream):
sour cream and chives, parsley or dill (preferably fresh!)
sour cream, dill or chives, and diced cucumber) lovely with hot or cold salmon.
sour cream and a little dollop of Colemans English mustard
sour cream and a squirt of tomato paste

sour cream and meat juices :p:p
double cream, meat juices and grated cheese

For meatballs: tinned chopped tomato and a dollop of tomato paste, mixed (preferably fresh) herbs or basil on its own, sour cream or yoghurt. pre fry meatballs then add the sauce to finish cooking

And a yummy one I use to mix with tinned crab: sour cream , lime juice, capers, fresh chopped coriander, and a dash of paprika (This is best mixed with the crab meat and left overnight.)

I really like tangy peanut sauce which you can make with Almonds or other nuts
I adapt this recipe http://elanaspantry.com/tangy-peanut-sauce/ taking out the fish sauce and Agave nectar or honey. Chilli I sometimes swap for lime juice and also use coconut milk or cream depending on what is in my pantry.
