Well for tonight .. It cousus .. With aubergines in a tomato sauce .. With middle eastern style spices ..
And will be having roasted cauliflower in cinimmon and cumin power
With chickpeas in harasas paste .. (Sorry spelling)

Should be lots left for the fridge which will be eaten with whole meal pitta bread and sour cream later in the week .. :)

B: Not normally one for a sweet breakfast but experimented with the Coconut/Psyllium Flat Bread by adding Cocoa Powder, Coconut Essence, Vanilla Essence & a little Stevia. Ate it with peanut butter - not too shabby :)

L: Tomato, olive & walnut flax muffin with avocado & a couple of spinach puffs

D: Usual Sunday night - 2 Burgen soy & linseed toast with Vegemite, avocado & eggs

My menus can get a bit same same because husband travels a lot & it's a bit dreary cooking for one but maybe this lovely new vegetarian forum will inspire me :)
Yes it's easier to cook for more .. I love making pots of soup thrn freezing it .. Just to make things easier

B: cheese omelette

L: blueberry chia pudding - didn't have much left from this batch so padded it out with desiccated coconut, walnuts and almonds. Was fab - should do this more often. Creamy decaf.

D: lazy korma - quorn fillets, bell pepper, mushrooms, flaked almonds, M&S korma paste, double cream.

A fry up .... Mixed onion,carrot,tiny potato, white cabbage, courgette .. with a LM sausage, chestnut mushrooms, tomatoes, and a few fried eggs .. lovely jubiey

B: flax/psyllium toast with peanut Butter
L: 1/2 piece flax/psyllium toast with Vegemite & swiss cheese plus a combo of spinach puffs (lord don't ever let me get sick of these!) & cauliflower tots
D: olive & jalapeno fathead pizza & a sad, perfunctory salad

A www that's nice @Safi I only know two dishes .. But I do plan to find some more ideas in the new year ..
tonight had yesterday's leftovers .. Added some sour cream and a nice Flat bread . It was good ..

Bit light on the veggies lately :oops: need to get back into the habit of having lots of salad bits prepped in the fridge & ready to go.

watercress and beetroot and lemon juice and olive oil salad, little feta cheese
stuffed green olives, half an avocado, one third of a gluten free seeded bread roll , flax oil,
unsweetened soya yoghurt mixed with a little100% blackcurrant cordial

sauteed courgettes, olive oil , garlic, plain tofu, miso, soy sauce
salad of grated beetroot, carrot, watercress, olive oil, cider vinegar
strawberries, honey, soya yoghurt, mixed together


one of each: ginger tea , camomile tea, green tea, several teas with goats milk, some with soya milk
i dried fig, 2 dried dates, ground almonds, 3 pieces of 85% plain chocolate

cocoa with soya milk

approx 130 - 140 carbs,

Breakfast .. My usual oats and almond milk ..

Lunch .. Layered salad .. Layered in a glass bowl the colours look so nice ..
Tomatoes .. Carrots cucumber sweet corn ..Mayo which ever I like .. Often the olive oil one sometimes the egg free one ..
Grated cheese on top .. Now and then a layer of rustic pasta .. The bowl stays in the fridge ..for a few lunches ..
It can be a main dish to with some roassted sweet potatoes .. Then I would not add the pasta ..

Tonight ..
Well I decided I needed spicy flavour ..due to the weather being so cold .. Nigella would say that !!!!

Have made three dishes ..

Black eyed beans in a spicy tomato sauce ..

A small portion of spicy potatoes .. Not had that for ages ..

A thick pot of spinach .. In turmeric ... And coconut ..

I love using ginger garlic coriander and curry leaves .. Which I have done to day ..
No rice this evening But some nice Indian flat breads which I keep in the freeza ... Made from chick pea flour ..

I have cooked in bulk .. So there will be some for freezing ..
Or I might just leave in the fridge for light lunches during the week ..

Here you go @flossymartin05 . They're based on the one-minute-microwave-flax-muffin but I prefer to do them in bulk. Bit tricky on the carb content as I adjust the recipe according to whats in the fridge (ie: the olives/nuts/cheese combo can vary). Last one I worked out had no walnuts but 150gm all up of olives & they worked out at 5.2 net carbs each. The blueberry walnut version comes in at 4.8 net carbs each - I'll type that one up later :)

Savoury Low Carb Flax/Psyllium Muffins


1 Cup Golden Flaxseed Meal

1 Cup Psyllium Husk

100gm Grated Vintage Cheddar

100gm Chopped Walnuts

1 TBS Garlic Powder

1 TBS Italian Herb Blend

2 tsp Baking Powder

1 tsp Baking Soda


5 Eggs

100ml Extra Virgin Olive Oil

250ml Water

125ml Tomato Paste

100 gm chopped Kalamata Olives (Optional)


Pre-heat oven to 175 degrees Celsius & line a 10 hole muffin tray with paper muffin cups (these guys can stick)


In a large bowl mix together dry ingredients (including cheese).


In a separate bowl beat eggs then beat in oil, water & tomato paste.


Add wet ingredients to dry, mix well & allow to sit for a minute or two.


Generously fill paper muffin cups (these won’t rise a huge deal) & bake for 20 to 25mins.
