Interesting test I've done.
White bread when used in a sandwich, raises my bg by a large amount.
However, if I have fried bread my bg only raises a small amount.
Any thoughts on this?

I believe that will be the fat content - it will slow the release of the catbs

It isn't strange at all. The fat from frying the bread will have flattened the spike. I can also eat fried white bread without much of a rise, but certainly can't eat it un-fried, or wholemeal for that matter.

If you have to eat sandwiches , best to butter them.

I used to make my own bread until I tested and found out what it did to me. I tried to find ways of making it acceptable and the best I achieved was to make the dough mix with 1.5 ounces of lard in it. A great improvement but since I was aiming for lower at the time I did not continue with it.

Here is another useful discovery. Fresh dumplings with the suet still present are great. Yesterdays dumplings with the suet leached out of them are bordering on the dangerous.

You just reminded me of the bread I used to make - it had lard added, as per my grandmother's recipe. I might try that in a year or so. Our children always loved my bread.

Kevin I am exactly the same...fried bread is now part of my low carb breakfast bacon, tomatoes,mushrooms and yum yum fried bread, can't eat eggs due to IBS tolerance .
