Concentrate on the carbs, these are converted to glucose during digestion though how quickly they are converted depends on their glycaemic index and glycaemic load. You'll only really discover how different foods affect your blood glucose by testing as we all tend to react differently.
Also note that the Glycemic Index is just a rough guide. All of us have different levels of impairment. So a low GI food may work for some...but for others it will still cause the glucose/insulin response to spike.
That is where post meal testing provides the best guidance to better food choices.
