LOW CARB CHOCOLATE BROWNIES

Three cheers for low carb cake recipes.....

Low Carb Brownies
Makes about 48 (or less if you are greedy like me :mrgreen: )

1 cup ground almonds, well sifted (most supermarkets do ground almonds)
1/2 teaspoon baking powder
1/2 teaspoon salt
1-3/4 cups Splenda or granulated Maltitol etc
1 cup unsalted butter
4 ounces unsweetened baking chocolate (or good quality dark choc), chopped
2 teaspoons vanilla essence
4 extra large eggs, beaten
1 cup chopped pecans

Preheat oven to 350 F. Butter a 9" x 13" cake pan. Stir together almonds, baking powder, salt and Splenda; set aside. In a microwave bowl, on high, melt the butter and the chocolate, stirring frequently. Add the Splenda, the beaten eggs and vanilla; beat until well blended. Stir in the dry mixture, mix well, then stir in the pecans. Pour into the prepared pan, spread evenly. Bake for about 20 minutes or until a toothpick inserted in the center comes out clean. Check at 15 minutes. Do not overbake. Cool on wire rack, cut into 48 squares.

Note: 1.8 net carbs per square

Thanks for this recipe its saved my life, i have been nominted to provide puds at our monthly get together and for Chrismas Day. Being newly diagnosed ~(28th Nov 08) its still all a bit scary. This will be a great help and will save me sitting chewing my nails instead of dessert. Thanks Sputnik

8tbsps of Splenda is the equivalent of 100g sugar. Now I don't know how much a tablespoon of splenda weighs, but...

I think because Splenda is sweeter than sugar then you don't need as much splenda...it's not a 1:1 equivalent. I can't imagine 8tbsps of Splenda (which is the equivalent of 100g sugar) weighing 100g. Which would mean fewer carbs.

Just checked on their website, 125g Splenda is the equivalent of 1.25kg of Sugar, so there's a 10:1 (Sugar:Splenda) ratio.

Hey,
newly diagnosed, looks like a great recipe i want to make it today!
How much is a cup? literally a cup?! like a mug or is it an american thing?!
Also is the sweetener 1 and 3/4 of a cup or between 3/4 and a cup full?

1 cup unsalted butter is around 8oz/227g
1 cup pecans is around 3.5oz/100g
1 cup almonds 8oz/227g
1 cup splenda ~1oz/25g

except for the Splenda

This site has nutritional info about Splenda, 1 cup splenda is approximately 24g carbs there are 97.7g carbs/100g therefore 1 cup is approximately 25g.

No I haven't, the good quality chocolate generally doesn't last long enough in this household.

This deserves a bump. I made these tonight and they were absolutely delish. Felt like I was being naughty but no effect on blood sugars really. Was my first attempt at baking low carb treats but will deffo be experimenting with more to curb by sweet cravings!

Any suggestions what I could add instead of pecans? Peanut butter? Or something else? Please help

I actually couldn't find pecans in the shop I went to but I had some almond pieces at home I used a handful of those instead. Was still delish!

@mo53 Try some hazelnuts - I make choccie muffins using hazelnuts as my flour substitute (ground in coffee grinder) and I almost prefer this to ground almonds for baking with chocolate and/or cocoa. A bit of cinnamon goes well with this combination too.
