Ok, then you'll need the help of your diabetes nurse to adjust that.

*If you adjust your diet without adjusting your insulin, then you could be putting yourself at risk of hypos*

You don't need to cut carbs out, you can get help to adjust your insulin to cover what you want to eat.

You may also want to ask about the basal/bolus regime as that might be more flexible.

The way you are eating you are reliant on carbs for your energy needs, so you will never start to burn fat.
Low carb normally means no grains, so no bread or Weetabix, no sweetcorn - it is a grain not a vegetable, no supersweet fruits and no starchy vegetables.
There are lots of things you could eat, some which might seem strange, such as replacing rice with chopped cauliflower, but they do work.

The OP is Type 1 and on mixed insulin. It's important not to make any dietary changes without adjusting insulin or getting help to,adjust it from a medical professional.

I am sure that the OP knows that - as they have been eating low carb and then going back to high carb foods

But have said that they don't count carbs - which means adjusting insulin.

Edited to add that fixed dose mixed insulin requires carb consistency to avoid hypos.

Absolutely... its non flexible for anybody that is wanting to address any losing weight plan as you are stuck with eating certain amounts of carbs no matter what they ate at set times of day and normally with snacks being a must as well at times...
