Vegetarians: What have you eaten today?

    Yesterday my daughter wanted to make smokey ball things on courgetti. The main ingredient was ground up cooked pasta. I thought I would give it a go as they say cooled pasta/resistant starch is not so bad. I was 7.7 after 1 hour. Outside my comfort zone so will not have them again. They were tasty enough, but a mushy texture.

    Yes, related to 3c, specifically my pancreatitis - my pancreas was pumping out all its digestive enzymes into me (the equivalent of battery acid), damaging every* organ nearby, including my stomach and duodenum. The consultant said 2 1/2 years was still early to recover and another 6 months could see things settle down.

    *At the worst point, my liver, kidneys, spleen and lungs had all ceased functioning (so I'm told). Therefore, being sick and having stomach ache isn't so bad (plus the little diabetes thing).

    *** Back on thread:

    B: Hot cross bun (wholemeal) for a Sunday treat and it is Lent (although even a small bun is crazily sugary - I hit 7.7 after 1.5 hours which was better than I thought (equivalent to @Avocado Sevenfold's smokey pasta balls). However, I inject fast acting insulin).

    L: About to have a cheese & mushroom omelette with salad: a rare LCHF meal for me; no reason other than I fancy an omelette.

    D: Ye olde nut cutlet, potatoes & veg of some sort. There will also be a caraway seed cake, as we're celebrating my Father-in-Law's birthday and my wife's baking his favourite, so I will be "obliged" to have a small piece -> more sugar :-(

    @Ledzeptt My friend's husband has had pancreatitis and it was hellish. Certainly puts my medical grumbles into perspective.

    Do you know when you hear annoying people say, "Sometimes I just forget to eat." Aye so they do :blackeye: Well that was me today! Friend came round and I had a quick cup of almond milk then we went out for the day without breakfast or lunch.

    Dinner was good though.
    Stir fry - beansprouts, green beans, edamame beans, peppers, mushrooms, cashews and tofu.
    Sauce for blobbing on top - ginger, garlic, chilli, lime juice, tomato puree, peanut butter, coconut cream.

    I told my daughter about the courgette van you saw and she told me Morrisons have another one in their fleet -

    B: golden milk
    L: salad, tofu pieces, garlic hummus, seeds (made the garlic hummus with a whole roasted bulb and it tastes very sweet, but in a good way)
    D: leftover stir fry with the satay sauce

    A couple of frolicking youngsters to celebrate the arrival of Spring!

    B: decaf coffee and pecans

    L: scrambled tofu and 2 LM sausages

    D: mince and bean chilli, avocado, pickled jalapenos and chive yogurt in iceberg wraps

    Bit of a change of routine today as I am on a 24 hour BP machine hence my Zen-like calm o_O:blackeye::angelic:

    Yesterday: nothing exciting as it was a work day, but I'm eating well this week.

    B: Muesli

    L: Hummus salad sandwich. Quorn cocktail sausages.

    D: "Shepherdess" pie (quorn mince).

    Snack: Almonds.

    Haven't posted in a while due to work and family commitments but hopefully more time to do so,
    Breakfast, full fat yogurt and flax seed
    Lunch, homemade veggie soup,
    Dinner, asparagus and poached eggs, few strawberries and raspberries.

    Dinner: stir fried pack of Sainsbury's stir fry veg, two beaten eggs over it and then grated red leicester
    Tea: Yummy pea soup
