I've just prepared this one from Diet Doctor, https://www.dietdoctor.com/recipes/roasted-vegetables-tricolore . It's a mix of roast cherry tomatoes, mushrooms and sprouts. We had it a lot last winter and have been waiting for some nice sprouts to come into the shops to put it back on the menu. I'll be serving it with pan fried salmon fillets.
