The Daily Mail reported new diabetes research that shows how a diet rich in coconut oil could help to prevent type 2 diabetes development . The oil, which is prevalent in common UK foods including margarine, helps to prevent insulin resistance.
A team of Australian scientists used mice to compare the influence of coconut oil-rich foods with a diet based on lard. According to the results, mice that were fed coconuts became less likely to develop insulin resistance . Coconut oil is an uncertain foodstuff as it is thought to be high in saturated fat .
Coconut fat is somewhat different, and may be made up of ‘medium chain’ fatty acids. These are generally regarded as healthier than long-chain fatty acids found in many animal products, including butter and lard.
