Mediterranean-style salad on French bread (Serves 2)

Ingredients

  • One French baguette divided and sliced into 4-inch lengths
  • ½ red onion, finely chopped and diced
  • ½ tomato, finely chopped
  • ½ cucumber, peeled and chopped
  • Mixed fresh herbs to give flavour (parsley, tarragon, chives, basil, etc.)
  • 1 teaspoon olive oil
  • Ground black pepper
  • Clove Garlic, peeled

Recipe

Take the sliced lengths of baguette and either grill or toast them until they are satisfactorily golden. Once they are hot, rub the bread with the garlic clove, and put to one side. Mix the salad in a salad bowel with the olive oil, and then carefully add equal amounts to each piece of warm bread. Use the black pepper to season.
