Ingredients
To make Peperonata, you'll need:
  • 2 red peppers, cored and sliced thinly
  • 2 yellow peppers, cored and sliced thinly
  • Half a courgette, chopped roughly
  • 400g tinned tomatoes
  • 2 red onions, peeled and sliced thinly
  • 4 cloves of garlic peeled and crushed
  • 2 tbsp. olive oil
  • Salt and pepper to taste

Method

  • Heat up the olive oil over a medium heat in a medium sized saucepan.
  • Add the red onions and garlic to the oil and cook until softened. This should take 3-4 minutes.
  • Place the peppers in the pan. 
  • Season to taste.
  • Add in the tomatoes and cook, without the lid on, for approximately 15 minutes.
  • Your dish is ready to be served!
