Ingredients
To make Peperonata, you'll need:
- 2 red peppers, cored and sliced thinly
- 2 yellow peppers, cored and sliced thinly
- Half a courgette, chopped roughly
- 400g tinned tomatoes
- 2 red onions, peeled and sliced thinly
- 4 cloves of garlic peeled and crushed
- 2 tbsp. olive oil
- Salt and pepper to taste
Method
- Heat up the olive oil over a medium heat in a medium sized saucepan.
- Add the red onions and garlic to the oil and cook until softened. This should take 3-4 minutes.
- Place the peppers in the pan.
- Season to taste.
- Add in the tomatoes and cook, without the lid on, for approximately 15 minutes.
- Your dish is ready to be served!
