Vichyssoise

Serves: 4

Method

  • In a blender or food processor fitted with a metal blade process broth potato and leeks until smooth
  • Pour into a saucepan and cook until potato is tender about 15 min
  • Place remaining ingredients except chives in blender or food processor with cooked vegetable mixture and process again until snooth
  • Chill before serving
  • Garnish with chives

  • 100 c Chicken broth or vegetable -stock
  • 100 md Potato; peeled and diced
  • 200 c Milk skim 025 ts Salt Pepper tp taste
  • 100 tb Ricotta cheese; part skim
  • 100 ts Chives; chopped
