Hi someone said use nut flours instead of wheat flour, (I think it was CollieBoy, but maybe not) so I was just in Sainsbury's a hour or so ago so I asked about Nut Flours - a nice girl took me round to an aisle, and there was Peanut Flour and Coconut Flour - is that the kind of thing?
Cos boy was it expensive! £5 for a small bag - phew! But is it even the right stuff? And what do things made with it taste like?
I ask that last one, cos I tried Almond milk and it was terrible! Absolute YUK!
So I'm kind of wary now.
 
Hello @FranOnTheEdge . I think you need to google some low carb recipes. There are cake recipes with almond and coconut flour. There is a thread on this forum for low carb recipes and a brilliant website is diabeticbaking.com. On there you will find a fabulous ricotta cake recipe. It depends really what you were thinking of baking.
 
You can always try ground almonds instead of the more expensive almond flour. It's probably coarser but it works fine for me.

I used to make cookies with just almond flour and butter and crackers with almond flour/meal with herbs and EVOO. Also muffins with almond flour. All very simple and tasty.

I think you're right, I'm not much into cakes though, I'm more into savoury things. I'll see what I can find.
 
I use ground almonds from lidl, sometimes i whizz them up in the food processor to give a finer texture but usually I don't bother, they work fine for me.
Coconut flour I make my own (coarser version) by blitzing desiccated unsweetened coconut into a fine powder, my local supermarket often has desiccated coconut on offer.

Yes, I tried that once, in a 12 cup muffin tin (silicon) they lasted a long, long time - they weren't nasty or anything, but after the first few I just found myself dismissing them and searching for a proper meal instead.
I seem to suit something lightish for breakfast, (had tomatoes on toast this morning - delish!) and a meal for dinner (evening), with an occasional something light for lunch. If I'm painting, then I don't think about food at all, but I haven't had time to work for a couple of months now, in my search for something I could stand to eat and yet is good for me... it's not an easy balance. And it's taking up too much of my time - I want my art time back!!!!

I don't know what EVOO is, sorry. Are all those sweet things? I'm not much into sweet things like that.

What I was thinking of baking, is something savoury, I'm not much into baking sweet things. I have made my own bread before, but I guess that's out now - or if it's still possible - without flour - it'll turn out to be something leaden and heavy... this is so depressing. I am looking at the low carb thread... promise! Lol!

Hi Fran
You can still make your own bread, just use low carb alternatives to the standard flour. Oopsie breads have been in news a bit recently, i find them very versatile. I do love almond breads too, I add lots of seeds to mine. Have a look at Ewelinas website, her recipes work very well.

You'd be amazed at what you get used to.
(It's not that dear, if you consider how much you'll actually use

Bran flour.
Soya flour.
Chick pea flour.
Almond flour.
Coconut flour.

Some muffins you can catch on the rebound if you drop them.
After a few you can actually get to like them as well.
 
I found some affordable coconut flour in Costco.
 


It's eggs, flour that won't rise, and baking powder. Get it right, it'll be ok.
Get it wrong, you can play squash with them, and they'll still be ok. if, like me, you still fancy some form of bread.
