Oh the sweet irony of it.......

Last year I treated myself to a ken wood chef mixer. About 3 months later having had 5 weeks off work and being very poorly with pneumonia I was diagnosed with diabetes. I was remind of this this morning as I have just whipped up a tray of brownies for jumble sale for daughters rangers. I now have to smell brownies cooking. I would like to claim to be some natural Mother Earth figure but actually I need to thank Betty Crocker ;):D
 
Come on one little one cant cause to much problem ?
Go for it, I can smell them as well :mad:
 
Scandi - if you fancy a healthy brownie make the lchf chocolate mug cakes but sub some of the butter for coconut oil then leave to go cold. It will be very brownie like in taste and texture :)
 
Know the feeling, I baked loads of cakes cookies and tray bakes for a garden fund raiser. The thing is I never had a sweet tooth - but oh the smell of oat cookies and brownies slurrrrrp.

What it is, is I can actually cook and my speciality was always desserts. I discovered Betty Crocker and thought they taste lovely. Then discovered I was diabetic :( We like the Victoria sandwich cake and the choccie brownies but the problem is that I like to add peanut butter as per the recommendation but the kids don't then like them so I can basically only ever make them if someone comes round for a rare treat. I make the mug cakes but put 2 squares of Aldi dark with orange instead of nuts and is lovely. Money is the worst it's ever been and I've had to get quite inventive with the cooking although thank god for Aldi as I can get most stuff for £50 a week and top up at the supermarket for coffee, lentils, mixed beans and fish. (Theirs is rubbish).
 
I think the Aldi chocolate is nicer than most. It has a satisfying snap to it when you bite it :)

You've never met my "little one! she can start a fight in an empty house!
And how dare you say you can smell her little ones, she makes them shower regularly:):)
 
You could sell the kenwood chef!! Mine's gathering dust too ;)

Diagnosed prediabetic Easter 2014. Just left to get on with it, no guidance or help from GP. Every day I'm learning something new.

I sometimes make a cake with low sugar, I miss my baking days as well.....:facepalm:
Share those brownies , but I guess they have all been eaten now :rolleyes: X
 
I made some banana and chocolate cakes for the boys last week, they did smell good but I have to say I wasn't tempted. The brownies however were a different story...

I have made low carb peanut butter and chocolate brownies and they had the same gooey texture as 'normal' brownies. They were really nice.

Sorry to hear money is tight, it's not great here either. Carbs are so much cheaper aren't they? My husband does the 'whoopsies' once a week and gets loads for little money but it is a lot of carbs - at least they are well fed. But he does get a lot of veg. I'd be rubbish at it though as I would just stand back and get nothing!!

my speciality was Banana cake, I used to have to hide it for a day as it was always better the second day, nice and moist. I miss bananas. But do have banana sf syrup, just made some banana ice cream today. Might try to make the next batch of brownies banana flavour.

Thanks! Well paid job but hubbie lost job 2 years ago and now works part time in a nursery. On pittance. Lots of debt. Stupid really. We buried our heads in the sand, loaded up the credit card and it hasn't got any better. We would be ok if not for debt. Cross with self for stupidity so don't deserve any sympathy. Hubbie got some extra work in summer hols but won't get much pay. On upside, don't have to pay retainer for summer hols as kids going to after school club so saving £450 per year. Sorry for off loading and please don't feel you need to reply and hope haven't made anyone feel uncomfortable.
 
Scandi I think very few people plan for unexpected things happening in their lives, life carries on and them bam something happens - in your case your husband lost his job, in mine I got pregnant and left work. My husband burried his head in the sand and the debts got bigger and bigger until we had to get help so you do have my sympathy. So we got back on track and a year ago hubbie left his full time well paid teaching job to go on supply. He had 2 lots of 6 months off with stress and enough was enough. He is so much happier but his salary has halved and money is tight. We can manage but of course he won't get paid over the summer so not sure what will happen. Then even better...in a year's time he hope to train to be a vicar! I have a part time well paid job and hope to get more work - this time paying a pittance. Well done to your hubbie getting another job, it isn't easy. If you ever need to talk you know where I am.

If you shop in Aldi do you know about the £5 off in the mirror? You have to spend £45 (used to be £30 but is gradually creeping up) and it is in the paper the last Thursday of the month - this coming Thursday. There are also vouchers for 30/50% off certain products.

Well I am replying , and I am really sorry to hear times are hard....in both mine and my husbands careers things never went good all of the time due to change and politics and those were hard times,,but there will always be a light at the end of the tunnel ....bad times are awful but the better times will come back round again ...

Thank you for your help and support. It's really appreciated. Mostly I'm fine but every now and again I get a bit upset and worried. I'm sure well get it sorted and we've already taken positive steps like ringing the credit card company and changing supermarkets. I have found that it's best to give ourselves an allowance which I draw out weekly. I also plan meals for the week and only shop for the necessary ingredients. We have Lidl not Aldi but for some silly reason I keep saying Aldi! Sometimes you just need to off load and it's great when someone spares 5 minutes to listen. If you want to talk I would be more than happy to listen too. Take care and a big hug!

Thank you! You are one of the kindest people on this forum! Feeling silly and a bit tearful which is daft really. I need to just grit my teeth and act on my plan. Sometimes it's hard being grown up - even if you are 43! Lol!
 
Lidl also do a money off voucher but it is not a regular thing like Aldi. If I hear about it I will let you know
 
A Kenwood chef is a pretty useful gadget. Soups, shredded veggies, low carb brownies. I have a flour free recipe and substitute Erythritol for sugar.
I us my processer [ a very competitvely priced one from LIDL] often and my stick blender even more so. There are LOADS of healthy recipes out there. and on this web site. Just make sure the clean up time for the machine is not outweighing the time saved on preparation.

PS most parts of my machine go in the dishwasher.
