Slow Cooker Gingerbread


Cooking a cake in your slow cooker is not only easy but results in an amazingly moist, dense consistency. It’s more like an old-fashioned steamed pudding and it doesn’t need much more than a bit of whipped cream on top for garnish. As since we are entering holiday season, I thought a slow cooker gingerbread was in order.

Ingredients:
2 1/4 cups almond flour or sunflower seed flour

3/4 cup Swerve Sweetener or usual sweetener

2 tbsp coconut flour

1 tbsp dark cocoa powder

1 1/2 tbsp ground ginger (or more, if you like it really gingery)

1/2 tbsp ground cinnamon

2 tsp baking powder

1/2 tsp ground cloves

1/4 tsp salt

1/2 cup butter, melted

4 large eggs

2/3 cup almond milk or water

1 tbsp freshly squeezed lemon juice (if using sunflower seed flour – helps keep it from turning green)

1 tsp vanilla extract

Preparation:
Grease the ceramic interior of a 6 quart slow cooker well.

In a large bowl, whisk together almond flour or sunflower seed flour, sweetener, coconut flour, cocoa powder, ginger, cinnamon, baking powder, cloves and salt.

Stir in melted butter, eggs, almond milk or water, lemon juice if using, and vanilla extract until well incorporated.

Pour into prepared slow cooker and cook on low for 2 1/2 to 3 hours, until set.

Serve with lightly sweetened whipped cream. It also makes a great breakfast treat with a little smear of butter!

Cauliflower Chowder

4 slices of bacon cooked
2 Tbsp of unsalted butter
2 Cloves of garlic - crushed
1 Onion - Diced
2 Carrots - peeled & diced
2 Celery stalks - diced
1/4 cup of all purpose flour - any kind
4 Cups of chicken broth
1 Cup of milk
1 head of a cauliflower - roughly chopped
1 bay leaf
Kosher salt & black pepper to taste
2 Tbsp of fresh flat leaf parsley....

Heat a large skillet over a medium heat & fry the bacon until
brown & crispy. Transfer to a paper lined plate & set aside.
Melt butter in a large pan over a medium heat, add garlic
onions, carrots & celery, cook, stirring occasionally for about
3-4 mins. Stir in the cauliflower & the bay leaf, cook for another
3-4 mins until barely crisp.
Whisk in the flour until lightly browned, about 1 min. Gradually
whisk in broth & milk whisking constantly until slightly thickened.
Bring to the boil, then reduce heat and simmer until cauliflower
Has cooked about 10 mins. Season with salt & pepper. If too
thick add more milk till you get it how you want it.
Serve immediately. Garnish with bacon & parsley...

Place a few rolled oats in a dessert dish or small glass [ I get the ones from Aldi 89p] pour over some plain yogurt and repeat again, top with flaked almonds, I blend my own, top with either fresh raspberries or frozen ones. Place in fridge over night delicious fat free, I usually do a couple at a time eat for breakfast or anytime, can also make with bran flakes and strawberries if preferred.

Recipe for my Rye sponge cake.:)

8oz Rye flour
4oz butter (softened)
4 large eggs (as fresh as you can get)
2.5oz Truvia (or similar) sweetener
1 tbsp bicarbonate of soda
1 tbsp baking powder
Vanilla essence (a few drops)
Almond essence (a few drops)
Some crushed walnuts
Some crushed hazelnuts (these were all the nuts I had but any will do)
A good helping of desiccated coconut (I didn't measure this)
A splash of milk

Mix together flour, butter & sweetener. Then add eggs & continue mixing. Add bicarb, baking powder, essences, nuts & coconut and keep mixing. The dough may look a bit thick at this point so add the milk to loosen it up a bit. Grease & line a loaf tin with parchment & pour in the mixture. Bake on Gas Mark 4 (180C) for 35-45 mins. Check with skewer after 35 mins.
I was also meant to add Cinnamon, but forgot. Still tasted great though, and even better with butter on.:D

This is basically a breadcrumb recipe but uses seasoned pork scratchings in place of the breadcrumbs and flour that you would get with normal schnitzel.
You can use this for any breaded recipe.
I made this with gammon as it's all I had in but would work with chicken also. It's really yummy.
Put your meat in between sheets of cling film or in a sandwich bag and pound the hell out of it until it's as thin as you can get it.
Also pound away at some pork scratchings till they are as fine as you want. You can mill them or use a food processor also. I just used the meat tendoriser so some bits are still large as you can see in the pic.
Add seasoning to taste to the pork scratchings. For this one, I used garlic powder, cayenne pepper, paprika and oregano. You can use anything though. Mix them all together well.
Beat one egg.
Coat the meat in the egg and then the mixture. Or you can do what I did and brush the egg on and then sprinkle the mix over it, pressing down so it sticks.
Then fry each side for a few mins.

Just wondering if any of you have tried this drink. Most evenings it was not uncommon for us to be sat in front of the TV with a beverage in our hand quietly sipping away in a trance. Now I am type two and had to give up my beverage habits in the evenings. Recently my wife came up with the idea of sipping away at a drink of a different kind. We sort out a few options and landed on this one. Lime cordial the labels say it has some carbs but very little and when diluted with Sparkling soda water over ice cubes the small amount of carbs dilute further. It makes a very refreshing drink you can happily sip on while watching TV.

1 glass
Lime Cordial
Soda Water
Ice cubes.
Slice of lime and little umbrella (optional)

Enjoy

@Bobby59 That is like a drink that is common in India. They call it Fresh Lime Soda, and it's made with freshly squeezed limes rather than Lime Cordial. With a couple of spoons of sugar it's called Sweet Lime Soda. It is refreshing in hot weather.

Fried fish curry. Serves 4

2 tbsp of coconut oil
2 onions thinly sliced
1 can of chopped tomatoes
4-5 garlic cloves sliced
Thumb sized piece of fresh ginger peeled & sliced
3 tbsp of madras curry paste or( 3 generous tsp of curry powder
mixed with water to make a runny paste )
165 ml of coconut milk
Large handful of fresh coriander finely chopped
500g of while fish fillets skinned
1bag of beansprouts
Juice of half a lemon.

Heat 1 tbsp of coconut oil in a pan. Tip onions in and a pinch
of salt. Cook until soft and golden.
Meanwhile blend the garlic, ginger & tomatoes in a
Food processor until you have as others purée.
Add curry paste to onions, and mix through.
Stir in tomato mixture and simmer for about 10 mins until
thickened.
Add coconut milk and some of the coriander and gently mix.
In another pan add the remaining coconut oil and cook the fish
fillets on a med to high heat, about 1 min each side until they begin
to brown. Carefully add the fish to the tomato mixture and simmer
until cooked through. Squeeze the lemon over the fish and the remaining
Coriander, stir through and serve over a bed of beansprouts.

Low carb superfood bread recipe (from Paleo With Mrs P)

Ingredients
  • 100g Milled Flaxseed (if you do not have this then so long as you replace with a milled alternative then this will be fine)
  • 100g Mixed Seeds (eg a mix of any of the following : pumpkin, sunflower, sesame, linseed, poppy seeds etc)
  • 100g Chia seeds
  • 200g Ground Almonds
  • 1 Cup Water
  • ¼ Cup Melted Coconut Oil
  • 4 Eggs, Large and beaten
  • 1 Tsp Sea Salt

Instructions
  1. Pre-heat oven to 180° C / 356°F
  2. In to a deep mixing bowl place the flaxseed, mix seeds, chia seeds, ground almonds and sea salt and combine with a wooden spoon
  3. Create a well and pour in coconut oil and beaten eggs, combine until fully mixed in
  4. Now add in water and combine until you have a thick mixture
  5. Transfer batter to a loaf tin (I use silicone, but if you use an alternative make sure it's greased)
  6. Place in to oven for 1 hr until the top is golden and you can put a skewer through it that comes out clean
  7. Allow to fully cool before serving and before placing in a tin
  8. Store in an airtight container for up to one week

Notes
I use a silicone loaf tin 31 x 13 x 7cm H. (12¼" x 5" x 2¾").
Do check your bread at 40 minutes through to make sure the top is not burning - you can always add foil to the top of the bread to prevent this

Very Simple to Make Asian Stir-Fry

250g dried vermicelli noodles
500g Asian stir-fry vegetables
0.25 cups hoisin sauce
2 teaspoons chilli flakes
  • Soak noodles in a pot of boiling water for 5 minutes, or until they are soft enough to eat. Drain, and quickly rinse under cold water to keep from sticking. Set aside.
  • Heat a 1/4 cup water in a wok or large frying pan over medium-high heat. Add the vegetables and stir-fry for 4 to 5 minutes.
  • Add the noodles, hoisin sauce and chilli flakes and toss thoroughly to coat.
  • Serve immediately.

Chocolate and Vanilla Chai Seed Pudding.

6 heaped Teaspoons of Drinking Chocolate. (Didn't have Cocoa powder)
3 heaped Teaspoons of Canderel Sweetener.
1 Teaspoon of Vanilla Extract.
5 heaped Tablespoons of Chai Seeds.
1 x 120g Plain Greek Yoghurt.
500 ml of Boiling water.

Place all ingredients into a bowl, except Greek Yoghurt. Pour in the boiling water and stir till there's no lumps ( I used a balloon hand whisk) put to one side till cool, then fold in the Greek Yoghurt - divide into dishes and chill. Serve with cream if desired. = Enjoy.:)

Very Easy to Prepare One Pot Pasta with Broccoli (from Vorrei)

With just a few ingredients (two or three) and only one pot, this recipe will put dinner on the table in 15 minutes.

1 large or 2 small heads of broccoli

2 cloves garlic, chopped into a few pieces
6 anchovy fillets, roughly chopped (optional)
2 small dried red chillies, chopped, or 1/2 teaspoon chilli powder
Action:

5 tablespoons of Cenzino organic extra virgin olive oil
360g Pasta Gragnano Penne rigate
Grated Parmesan
  1. Cut the broccoli into small pieces.
  2. Heat olive oil in frying pan and add the anchovies, chillies and garlic. Low heat cook for 5 minutes.
  3. Cook broccoli in salted water for 6 minutes, add pasta and cook until al dante.
  4. Add both pasta and broccoli to frying pan that has flavoured oil and anchovies and mix to coat well.
  5. At last, add parmesan and serve.

Taramasalata and mozzarella salad - as a result of following the yellow sticker fairy in Waitrose I picked up these two ingredients for 50p each instead of a prawn cocktail. With your favourite salad leaves, some spring onion, chopped radish and a few baby tomatoes it's gorgeous, just break off lumps of mozza and dollops of taramasalata on top. About 5g of carbs in half a tub of the fish eggs, 2-3g in the cheese and under 5g in the salad.
