If I tested 2 hours after finishing a meal I would have much better results than I do by timing my testing from the start of a meal and would very definitely not catch any peaks. My peaks are almost always at 90 minutes from start of a meal, no matter what I eat, and are on their way back down at 2 hours after starting to eat. I prefer to know my peaks and how long after them that I am back to normal.
