Quick 'bread' triangles

I do not have diabetes
Super quick little 'bread' rolls, made in a sandwich toaster.

2 eggs
4 teaspoons coconut flour
Half a teaspoon baking powder
Pinch of salt

Beat together, allow the mix to thicken, while you heat up your sandwich toaster.
Pour the mix into the triangles.
Shut the toaster for about 5 minutes.
When these little triangles are cool you can slice them in half and make a sandwich.

Shouldn't that be 'tablespoons' of coconut flour?

Sorry, I replied in the wrong place I think, definitely teaspoons, I make a lot of these! I don't like microwaves, so I found an alternative.

I can see that when the triangles are split in half and buttered, then some filling added, then put back in the toasted sandwich maker.

Whohoooooo toasted sarnies are on the menu again.

Wondering if nut flours wouldn't work. ?? Coconut is no good for me. I sure other flours would work?

Almond flour maybe?
I have used almond flour to make muffins but I like your triangle shapes better!!

Here's a almond flour recipe I found, and will be giving this a try in the microwave.

Minute Mug Muffin

Instructions.

Combine almond flour, baking powder, and salt in a microwavable coffee mug.
Add egg and avocado oil, stir well with a fork.
Microwave on high for 1 minute.
Remove the muffin from the cup using a knife and slice in half.

Almond flour / meal has not got many carbs in it, scroll down the link till you get the nutrition bit.

I think mine is 2ncups almond flour / meal. Herbs if desired. Then one tablespoon olive oil and 2 tablespoons water. Combine herbs and flour. Then water and oil combine. For muffins put in four muffin pans. For crackers ( to die for) roll between parchment paper. Cut with pizza cutter or knife. Back til edges are light brown. CooL and eat. So good. Too good. I like oregano safe and rosemary with garlic.

Microwave and individual sound good too!

Hi, just tried these but mine turned out really "eggy" :(. Might try almond flour and just one egg next time.
