Hi all, as it’s pancake day, thought I’d share a recipe for low carb pancakes. This recipe made 8 small pancakes at approx 2g of carbs each. I had mine with raspberries and creme fraiche and stayed steady until lunch.
60g Philadelphia
50g ground almonds/almond flour
12g coconut flour
2 eggs
1 tsp vanilla
1 tsp baking powder
2 tbsps Stevia
Simply mix until smooth, leave the mixture to stand and then fry on a low heat.
