Here's an example of the way I read the value of a item, total carbs = 2.34

Carbohydrate 2.34 g
Sugar 0.5 g

The 'of which saturates' is part of the fat content information, irrelevant to most diabetics.

Do you mean ‘of which sugars’? If so they are included in the total carbs, so you can ignore the ‘of which sugars’ just look at the total carbs.
