If it says it high carb then it’s high carb. Whether you can eat them depends what level of carbs you allow yourself I guess.

If you sprout it, carbs will decrease.Just looked on can and it’s showing quite high carbs.

Then Just fry it with some ghee, red and green chilli, a punch turmeric put some onion , tomatoes and cucumber , lemon juice, salt. Very tasty.

Oh.. I have no experience with tinned lentils.I think you would struggle to sprout tinned lentils.
You soak them overnight, then you filter the water and keep it covered with in container with some cloth. Depending on the room temperature it will take 2-3 days to sprout.What do you mean sprout it?
