11am - fried some lardons and dumped in the remains of last nights red pepper and tomato sauce.

Dinner. Osaka style Okanomiyaki - basically a cabbage omelette. Added bacon bits and cheese. Topped with nori and bonito flakes.
Pudding - home made kefir mixed with Greek yoghurt and some berries.
A glass of Sauvignon blanc (day time wine) and then some Merlot (night time wine).

Haven't been on the forum in a while but used to get lots of ideas from this thread and just wondered what the following abbreviations mean:

CWC = Coffee with cream
CMT = Copy Me That = app for digitally storing and sharing recipes
CCB = Chocolate caramel (LC) bars - some mad old fool came up with that
NE = Nuritional or nosebag event

Thank you @ianpspurs for that insight. I do remember now attempting your CCBs but had a bit of a problem with the inulin, it went into a lump! Does anyone have the recipe so I could try again?

The recipe has a few tweaks from member to member but I think the basic version is available in the booklet @shelley262 so kindly coordinated last year.

Breakfast bacon and egg
Lunch half tin of sardines in olive oil and six lc seeded crispbreads followed by coffee and one square of 95% choc
Dinner two lamb chops with cauliflower cheese and small glass of Shiraz followed by four of my own crop of strawberries with spoon of yoghurt and cream then decaf coffee with three hotel choc 100% buttons.
Going to give my libre sensor a second immersion in the pool. Jacuzzi and steam room first thing in the morning as waterproof wrapping still firmly in place!

I have a food fairy that makes both of these for me but we are moving home and I don't know if there will be one at the bottom of the new garden.

Breakfast a kind of "egg mess" ie some strips of bacon, a sliced up cold sausage, cooked together and a couple of eggs thrown in at the last minute and given a bit of a mix around. I couldn't eat it all so left some to have...
Cold for lunch - even better than hot. Had a couple of crackers with it. Coffee with cream afterwards. Would have been better with black coffee.
Dinner - 3 more crackers with some veggie cheese and some proper gruyere plus some home made pickles (no sugar).

Thanks for the tag @shelley262 . @CoastGirl I have made the CCBS a few times now, I do remember the first time I made them the inulin caramel went in the bin as it went lumpy, however on subsequent attempts I just kept stirring it vigorously over a low heat and it got through the lumpy stage and eventually melted. It is a worrying stage when it goes lumpy, I even wrote in my recipe notes “don’t panic if it goes stringy and clumpy, it will dissolve eventually”!

No, I don't suffer with that (thank goodness) except for very mild itchy eyes on a hot day when the rape is flowering. I caught this while at the doctor's last Friday. I always do catch something when i spend time in that waiting room. Next time I'll wear nitrile gloves and a face mask. :shifty:

Or use a hand steriliser!

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch at the Breakfast Club: Eggs Royale on a slice of butternut squash (an option on the menu, and you can choose one or two slices! :))
Mid afternoon: coffee chia pudding and black coffee.
Dinner: spaghetti carbonara made with Explore Cuisine edamame spaghetti, followed by SF jelly, cream and LC chocolate granola.

I make it in an Instant Pot but if you dont have one I'll add on how to cook them in an oven at the end.

Ingredients

2 cups double cream (that 240 ml measuring cups)
6 egg yolks (whites can be used to make white egg omelette or low carb meringue using Lakanto sweetener)
3 tablespoons Lakanto classic sweetener
1 tablespoon vanilla extract

2 teaspoons inulin to caramelise the top.

Method

Simple - put everything in a bowl and whisk until well combined.
Transfer the mix into a jug and pour evenly into 6 4oz ramekins.
Cover each ramekin with a foil hat.

Instant Pot

Put the silicon trivet in the IP and add a cup of water to the IP. Put 3 ramekins (with foil hats) onto the trivet then the next 3 on top but offset them so they sit across 2 of the bottom ramekins.
Put lid on, make sure it is set to full pressure and set it on manual to 9 mins. After 9 mins natural release 10 - 15 mins then quick release any residual pressure.
Remove the ramekins from the IP and allow to cool. Once they have cooled sufficiently refrigerate with the hats on.

To finish when you want to eat them, sprinkle each brulee with 2 teaspoons of inulin and blowtorch it.

OVEN

You'll need a tray that the 6 ramekins can fit in with room for water to come half way up the sides and is able to circulate around them I.e. the ramekins should not be touching.
Set the oven to 350F 170C fan. Prepare as above but the foil hats are not required.
Heat water to hot but not boiling. Put the ramekins in the tray then add the hot water until it is about 1/2 way up the sides of the ramekins.
Carefully put the tray into the middle shelf of the oven. I'd check after 20 mins. The middle of the brulees should be just wobbly. Maximum they should take is 30 mins. When ready, remove the tray from the oven but leave the ramekins in the water bath for at least 1 hr before you remove them to cool completely. Once cool , cover with cling film and refrigerate.

Drove Dad to my cousin’s to have lunch and meet up with his sister.
So - white wine and fizzy water
Assorted cold fish platter - prawns, cold salmon, smoked salmon, smoked mackerel - mixed salad leaves with cherry toms, hm coleslaw, beetroot, cucumber. There was couscous which I love but didn’t eat.
Strawberries with ?Fage yoghurt and walnuts.
Tea
Evening slice LC bread with Camembert
Berries with Greek yoghurt.
Another lovely person who took my LC into consideration.

Evenin' All!

Today has been a rather odd food day.

B: none
L: forgot
S: took the pup and the rest of the pack to local cafe for Socialisation Exercise. Went very well except for the accidental ingestion of chicken in lime mayo GF sarnie. Odd really, because it was a big disappointment, and I have been drinking bucketloads of water ever since and feeling parched. I think my beady eyes and tingling taste buds identified Burgen bread with soya bits - which would explain the thirst, because that always happens with soya. Oh well. Won't happen again. Not worth it!
D: Cheesy scram egg with corned beef, chilli butter and lots of black pepper. Lush. The dogs had a teaspoon each, and now love me even more than before.

Curious to know, my foodie friends, how often you wash your hands at the kitchen sink.
(not counting bathroom hand washings)
Just curious.
The reason I ask, is because I consider that every time I wash my hands it is necessary - but it amounts up to a ridiculous number of times a day. Gardening. Food prep. Dog food prep (currently on 4 meals a day for the little one). Filling the bird feeder and changing the water in the bird bath. More food prep. Fish tank feedings, water changes and tweaking. After housework. Returning home after dog walk and poo bag handling. More food prep.
Honestly, I could keep a soap factory in business single handedly!
