Rice is highly likely to spike sugar as its starchy. Lots of people use cauliflower riced instead. Or just add a side of veg instead, or have more of the main dish
Let thine meter be your guide and let your guide be thine meter. Some people can take it especially if they are active buuuut I am with @HSSS and that doesn't go straight in my basket anymore. I'd avoid it and go for the cauli rice, absorbs a lot more flavour in my opinion.
