Sugarfree, flourfree lemon cream cheese cakes
Here's the recipe for the lemon and cream cheese cakes (with choc)
My amendments, use zest of 2 lemons in the cake batter
Use xylitol... be generous and the juice of half a lemon in the topping
I made 9 muffins and 12 little fairy cakes.
Tip get the oven hot and then don't open the door. Mine didn't rise as much and were darker in colour than the book pic. They are really lovely and moist and remind me of rum baba
Before I put the cream cheese topping on, I spread melted 85% dark choc!!
Combination is brilliant
Book says 2g per 100g

Extra lightness might be gained by separating the eggs and beating in the yolks, add the other ingredients then whip the whites to a froth and fold into the mix very gently.

Also many favourite "normal" recipes can often be converted to low carb simply by adjusting some of the ingredients. (Which is what I tend to do!)
