Being a T1 without insulin for five years? I'm no expert, but I think you'd pretty much be extremely dead by now.

I'm wondering if possibly the OP has been prescribed insulin for his T2 (since I also remember seeing his posts about not taking insulin due to his hatred of needles) and since he has the doctor has now incorrectly assumed since he now needs insulin that he is T1 - I know I've recently seen a thread where that was the case. Obviously this is pure speculation on my part.

As a type 1, without insulin your body would start breaking down fat and muscle tissue (ketoacidosis) so losing a vast amount of weight within a very short space of time and eventually death, key signs to look out for include pear breath, loss of weight, increased appetite, increased thirst, increased toilet visits, poor vision, poor thinking ability. As I understand it, without insulin you would only last 7-10 days.

I would question the diagnosis and regardless, avoid the noodles.
