I think the article might have mentioned that carnivore was adopted by the Petersons because they seem to have a proclivity for autoimmune diseases and have found for a long time that this diet relieves their symptoms.
We don't yet know what the long term efficacy or safety of the diet is and it is valid to point out that the Innuits eat collagen to overcome the lack of vitamin C; if I were carnivore it would be hard for me to eat 'nose to tail' but that is probably what's needed. It is also hypothesised that we need less anti oxidants in the context of this very clean diet.
It is invalid and slack to say that animal foods cause 'bad cholesterol' given that dairy is the only type of food where the balance of sat fat to the other types is greater. Even if you think high LDL matters which a lot of us don't!

If on the other hand you are referring to a diet totally consisting of meat then only time will tell and in that you are probably correct.
