Evening all. No coffee this morning due to the ‘coffee tum’I ’ve been experiencing. I was wondering the same thing @ianpspurs - does tea with 0 carb almond milk count as fasting or not ( think I know the answer!)
B/L: Omelette with fridge leftovers, bit of Camembert, small slice smoked ham and a few past their best mushrooms. Now allowed myself coffee as I was eating.
D: Slow roast lamb shoulder- yours looked wonderful @Goonergal . Mine done with garlic and thyme for around 7 hrs in a low conventional oven. No need to carve, I just pulled the 3 bones out and shredded with a couple of forks. Fab. Had it with cauli cheese, green beans and a bit of roast celeriac. Red wine then a bit too much cheese.
Ooh @Rachox No Jaffa cake! Hope your OH feels better soon.
@shelley262 those floods look serious, Definitely the right time to be living at the top of a hill
@Goonergal I also have some huge pasta dishes, not as nice as yours but probably similar dimensions. @Antje77 I love your plates but have nothing of suitable style to barter with. I like the traditional Dutch one best.
@annabell1 I hope the diarrhoea is resolved now, whether because of your break in Januvia or not, it must be quite debilitating.
@PenguinMum I have similar food issues with not knowing exactly who will be here for meals, and end up eating leftovers for a few days, or scrambling around trying to make a meal for 2 feed 6.
@DCUKMod I’m enjoying your culinary adventures, I love ginger too.

Bewdley where I live was taken by surprise last night with a storm Dennis flash flood on top of the predicted normal river rise so environment agency were having to work waist high in flood water to try and sort out our flood barriers - difficult times and a very fierce River Severn. Some properties got flooded for first time in 20 years as, in past, floods have been more predictable but this was sudden. Environment agency had predicted peak for Tuesday but got it wrong - mind you it all seems a bit unpredictable at the moment and I’m pleased I live up the valley a bit! I sometimes curse the climb up back home from the shops in Bewdley but not today!

That looks terrible. I feel so sorry for everybody living with or with the threat of flooding. It must be soul destroying.

Breakfast today at 1.45 was a mug of green gloopy soup.

Evening meal was at about 8 pm - Em was here earlier and wanted to play games and drink the last of my milk so that her Mum could deliver more laundry. Not usual on a Sunday, but she's going to the mainland on Tuesday and is trying to get ahead. Luckily her clients didn't object (this Island still observes the Sabbath to a great extent, after all). Then my brother and I put the world to rights for an hour over the phone.

So I used the chunks of ham from yesterday with chunks of chicken and some leeks in a kind of Spanish omelette. Still have about 1/4 of it left for breakfast tomorrow.

I'd offer to barter the plate for puppy-kisses when I visit the UK come may, but I'm afraid I'd be dancing too close to one of the C12 rules: 'No soliciting', which of course doesn't do as a Mod :angelic:

I think she’s finished it too! It was delicious, darn it. Plenty of puppy kisses and general mayhem on offer though, and I won’t tell a soul.

An introduction can be made. They do proffer other forms of deliciousness too, if you like chocolate, or even chocolate + alcohol, although I didn't much care for the Cocoa Gin I sampled.

Catching up with posts :

Birthday and Valentines were both great.

Opera was great too. The tenor had a heavenly voice . I think it was the best this season ( I buy season tickets).

We have been eating out except for breakfast (fried egg)
We had Thai for lunch ( I ate some prawns soup) and Italian for dinner ( I ate some sort of sausage with truffle cheese ). I handled the birthday cake very well ( two slices , one in the morning and one in afternoon) but then ruined it with the bread before dinner ( had a piece of bread with olive oil and vinegar).

I loved my valentine gifs ( artwork and toys and mugs). My boyfriend’s cat also gave me a valentine card with paw prints

I made sangria and it turned out to be a huge success! I put strawberries and blueberries in it.

Got a little but sun burnt today from walking my circuit around the neighborhood for 90 minutes, had bloods drawn for HBA1C have appointment next Tuesday with the diabetes specialist, lets hope it's ok and that my liver enzymes have come back down, they are slightly raised for no reason. My anxiety and OCD are sky high, but physically I am healing and recovering well. Greengages came into the local produce store today, I have eaten prunes before with no problems, but heck greengages are very rare down here, short season and they are hard to grow. Luckily they are low GI and low GL, so if i stew them up with no sugar, portion them out, freeze them, porridge should be good on Sundays for about 5 weeks with a small serving size. I don't usually snack, and I regret the brazil nuts.

Breakfast: 50g rolled oats, 67g fresh blueberries, 165g full fat greek yogurt. 5 white coffee 125ml milk

Lunch: 46g sprouted bread, 137g tomato, 111 cucumber, 100g ham, 70g baby spinach, mustard, salt, 3g butter, 31g reduced fat cheese.

Snack: 2 brazil nuts

Dinner: 168g chicken breast, 2 white corn tortillas, 190g broccoli, 20g salsa and one very small but ripe greengage plum.

Bed 5.6 FBG 6.1. @Annb - been there with Minecraft. The world of Iron Gollums, Creepers and creeper zombies. Grandson now codes to create the things he wants in the worlds so yes, it is a learning tool as well. @shelley262 - that does indeed look awful. We had a wild, windy night but thankfully not enough rain to come up though the drains. Don't know how high the Esk is but I'm not about to venture out to find out. @DJC3 - I'll have a go at cabbage mash but you might have to wait a bit. I really need to be in a cabbage mood for that. @ianpspurs - I too spotted the 23 eggs but @shelley262 beat me to it. My thought was you'd gone all Diet Doctor on us.
Sunday - I actually got a quiet day, no call outs to go anywhere, no grandsons, Hubby watching football so I got on with a pile of ironing and started washing the sofa covers. Grandsons are staying Thursday & Friday this week so I was doubting my wisdom over the sofa covers but they needed washing.

L. Made that DD crusted cheesy omelette. Tomato, bacon but interestingly you put grated cheese in the pan and let it melt before added the beaten eggs. That forms the crust and it's very good. Thankfully the current frying pan is very non stick.
D. Made the DD chicken curry in the IP. Added more veggies to it - broccoli, green beans, carrot ribbons, mini cobs and had it with cauli rice. A small Skyr later and my usual campari and soda.

Good thing I'll get my next 3 months worth of insulin in april. This means I should have enough to survive my holiday in early may :eek:
Also a good thing my next review with endo/DSN won't be before november and Libre graphs from that week will be long forgotten.

Yesterdays evening meal was a delicious kroket (15 gr), which is a breaded deep fried snack, so hard to dose for. I tried my luck with a split bolus (quite scary) which miraculously worked out perfectly.
Made egg salad (2 eggs, couple of rashers of bacon, small onion, sundried tomatoes, mayonnaise, horse radish, salt, pepper, paprika) on the side, served on parboiled cabbage leaves. Which sounds quite sophisticated but it means I threw the cabbage leaves in with the eggs for a minute or two when cooking, and made a mess when trying to eat.

I ate surrounded by dogs and cats trying to get the best spot for snatching dropped egg-salad :hungry:
I did make a picture but the lighting was so wrong that my plate looks like something the cat did so I won't share it with you because the meal was delicious :)

@maglil55 I think I found the omelette recipe but there are so many chicken curry recipes could you post the link to the one you enjoyed please. I am determined to find things from DD I can actually like or perish in the process. The weights in the omelette recipe look far more realistic than the allegedly personalised meal plan they provided me with. I remain sceptical about enjoying cream in my omelette but hey nonny ho. I seem to have totally set my face against DD but those are 2 meals I like so I am desperately hoping they will break my (irrational?) dislike. TIA

The crusted omelette sounds great. I don't miss many foods, but I used to love the crust sometimes formed under a paella. I've only achieved it once, with my cauli rice Pretendy Paella.

I'll definitely be trying the crust.

It won't surprise you to hear I adapted the curry recipe mainly because I prefer to do my own spicing. This is the basis of the recipe. What I changed-

I blitzed 1 onion, 1/2 red chilli, about a thumb sized bit of ginger and a couple of garlic cloves to form a paste which I then fried off in the IP for 3 or 4 mins. If it sticks I add a dash of water. Then I added sliced onion (Hubby likes onion in his curry). Added a bit of butter together with ground turmeric, cumin and coriander (about a teaspoon of each). Depending on how hot you like curries, also add 1 or 2 teaspoons hot chilli powder. The butter should be enough to stop it sticking but a dash of water helps if necessary. Add the skinned/boned chicken thighs (I kept them whole as the IP makes them very tender). Keep mixing to colour the chicken. I then added my veggie assortment - mini cobs, green beans, tenderstem broccoli and ribbon bits of carrot. It looked a bit dry to put under pressure so in went about a 1/2 cup of chicken stock with some chopped tomatoes in it. Check seasoning, up to pressure and about 20 mins plus slow release.
I took a portion out and added coconut cream to mine (I don't like the heat as much as Hubby) so that cooled it a little. Added fresh chopped coriander at the end.
You have to watch the liquid content. I've got it wrong before and ended up with a too thin curry sauce that then needs reducing. Slow cooking let's you see it a bit better.

Thanks you so much @maglil55. Now you have gone to so much trouble I am duty bound to give it a try. Spicing for us would need to be very mild as Julie a) doesn't like much spice and has severe pain if she ever eats anything very spiced by accident.
