I’m sure a lot of you are familiar with the Headbanger’s Kitchen website and YouTube channel, run by the extremely personable Sahil.
I would definitely encourage you to give Sahil’s almond flour pancakes a go if you haven’t tried them, I think they are really great for a weekend breakfast. They are properly indulgent when cooked in lots of butter and can be as sweet as your preference - I don’t eat many sweet things these days but I make these dessert-sweet with an erythritol/stevia blend, as a slightly guilty pleasure!

I usually only make batter with only one egg and half ingredients, which makes enough for 2 pancakes - I cook one on Saturday and the batter keeps happily in the fridge for a second one on Sunday, and I swap Greek yoghurt for the double cream and cream cheese because I don’t normally have those ingredients kicking around (the cream is for my coffee...).
These almost make up for the much-lamented exclusion of toast from my diet.... (nah, who am I kidding )
