@DJC3 - Not so long ago, I made "proper" lemon curd for MrB. That took willpower.

Of course being GF, and simply never having any bread or biscuit products at home, made it a bit easier, but the lemony temptation was strong!

Advice please. I read on here of air fryer. Theres one at £39 in Lidl (uk) this week. Is that a good price and why are they so good for diabetic cooking? Should I get one?

Hi there

It’s a decent price. For me the air fryer has been a godsend for things such as crispy chicken wings, cooking steaks/sausages/chops and keeping the meat juicy. I’ve had two - one similar to the one you mention, and now a larger one with shelves rather than a basket. That cost a bit more but was only bought once I knew that I’d get good use from it.

B. Greek yogurt (extra creamy) with chia seeds and blueberries. I piece of caulifower cheese 'bread
Then did hours dancing,then another hours exercise class on zoom
L. 2 egg muffins and green salad. 75g praline icecream ( experiment but pp rise only 1.5)
Another hour dancing
D. Idea was I would pick chicken chorizo and veg out of boys risotto but more rice stuck to it so limited myself to a very small portion. First rice in 10 weeks.
Eagerly awaiting pp result (not!)
Hours gardening and watering. So many watering can trips think it must count as weight lifting

Thanks. I dont usually fry anything... but now I'm diabetic maybe that needs to change. Are the ait fryers heavy or hot to put away. I hate cluttered surfaces

Thanks for lemon curd Info @Chook and @maglil55 I’m definitely making some ASAP. I’ve just ordered some more monkfruit sweetener.
@MrsA2 that Lidl airfryer sound like the one I have. I put mine in the cupboard between uses. I agree with @Goonergal it’s wonderful for crispy chicken, Halloumi chips, lamb chops. All sorts. I used to hate chicken skin and can’t believe how much I love it done in the af now. Hope the risotto rice didn’t cause too much of a problem.
Today I had black coffee until 12:00
Lunch was 1/2 avocado, slice of butchers cooked turkey, lettuce and h/m mayo with chilli sauce. Then a DGF salted caramel blondie with clotted cream.
Dinner Chicken ( Instant pot) with cauli cheese and spinach. 2 strawberries and cream with grated 100% chocolate sprinkled on top.
I have my first batch of yoghurt cooking in the IP now - quite excited at the thought of Greek yoghurt with a dollop of lemon curd stirred through.

Breakfast: Usual cheese and mushroom omelette, bacon, tomatoes, and they are back on the menu, reheated spudlites.
Lunch: Barbequeed chook wings, coupla beers.
Dinner: Mutton chops, veggies, pan juice gravy.

Drinks: Black coffee, low carb beer, water.

Thanks for the welcome back, @Chook. As to lupin beans, there's also lupin flour, which I combine with almond flour for use in baking . It is a bit like soy flour, but supposedly has fewer problems associated with it. It is quite low-carb (2.5g of usuable carbs per 100g) and quite inexpensive at least in Germany for a non-grain flour. Btw, neither the keto rolls (which include about 50% lupin flour) nor the lupin hummus cause any rise at all.

@SlimLizzy -- This is the first time I have heard of lupin oil. Would have never thought you could use them to make oil as they don't have much fat, but then again there's also grapeseed oil. Agree that lupins might be allergenic, just like soy or peanuts. As to homemade mayonnaise, I really like avocado or macadamia oil as they are relatively neutral. Tried rapeseed oil once and it is much better than evoo.

@Annb -- How is your brother doing? Keeping my fingers crossed for him.

Today ...

Breakfast: One double decaffeinated espresso with cream and erythritol.

Lunch: Half a DD keto roll with h/m mayonnaise and shrimps. A small serving of lupin hummus, salad olivieh and low-carb chocolate mousse.

Snack: A few chicken cracklings.

Dinner: A third of a T-bone steak with h/m sauce bearnaise and a small serving of cauliflower mashed with butter and potato fibers. Lamb's lettuce with h/m Caesar's dressing, parmiggiano, and crumbled chicken cracklings. Some dry red wine.

@SlimLizzy and @Annb I agree about the strong taste of extra virgin olive oil in mayo - yuk. I use the ‘light in colour’ olive oil but I think you’ve mentioned that you can’t get it in France SlimLizzy? I’ve also used avocado oil with good results but don’t know whether or not you can get that.
Please post your results using rapeseed oil, I’ll be interested to see.
Today I came the closest ever to breaking my low carb woe. Daughter’s partner was making lemon curd for a strawberry tart. It smelled heavenly. I used to make lemon curd a lot, I was SO tempted to put a finger in the bowl. It made me wonder if I could make it with Monkfruit sweetener. @maglil55 what do you think? I normally get the golden monkfruit but it would be worth buying the white one if it’d work. The rest of the ingredients would be fine. My mouth is watering at the thought of it.
@DJC3 have seen a recipe for low carb lemon curd, but have not made it.

Sunday Bed 5 FBG 5.3. Still getting a runny nose on and off but I know it's from all the grass cutting. Poor No 2 grandson's eyes are all puffed up too so he's back on antihistamine. Last year he had a dreadful time. Hubby is desperate to go to the garden centre but I cannot chance it in the current car now that the shudder is happening again.
B. TAG and 2 slices LC toast with pate.
L. Nothing
D. Rib eye steak, mustard, mushrooms, green beans and halloumi fries wrapped in streaky bacon. DGF choc and hazelnut with a few raspberries. Usual campari and soda.

Yesterday Monday 1 June - bed 5.4 FBG 5.9. I'm still trying to get the damaged bike collected. I discovered that I may be able to organise it direct with the courier. 2 hours later!! I have an email confirming pick up today sometime between 8am and 8pm.

B. TAG and a slice of LC toast with Philadelphia.
L. Hungry today so had a slice of GF black pudding, 4 rashers of crispy streaky bacon and a fried egg (double yolker).
D. Air fried chimichurri pork ribs, home made veggie salad and a curry mayo dip.

Weather is still glorious. Garden is lacking in colour because we have been so slow getting plants in. Hanging baskets are not done either and I can't see them happening at all this year.

Very proud I managed to make and eat dinner today.
I've had a couple of friends over today to work on the new fence for my new surprise goats to keep them IN my garden but OUT of my bathroom and to keep them from trampling the fence around the chicken pen because a trampled fence means escaped rabbits who then will be killed by my cute little chihuahua-like dog.

So lots of socialising and garden work, which means I'm done for at the end of the day and don't much feel like eating and even less like cooking.

But I did! Two leftover salads, one with beetroot and one spicy tomato salad with some warm goat cheese and roasted walnuts on top, with a vegetarian thing from Aldi (12 gr carbs a piece) which I somehow like in the same way I like fish fingers. A ridiculous food but still tasty :)

Not sure if I posted my goats in the bathroom pic already on this thread so apologies if this is a duplicate. The goats were a belated surprise birthday present I got two weeks ago, so it took a while to figure out how to keep them in their temporary pen :hilarious:

IP yoghurt seems to have worked well. @DCUKMod I think I remember you saying you use the whey as a starter for the next batch? Are there any other uses for it ( apart from scones - I’m sure it used to be an ingredient to make scones light and fluffy)

L was pulled pork
D was curry with yog and mango chutney. I made a mistake with that batch. Too liquid, and not fragrant enough.

Yesterday was Tescos delivery day.
Supposed to be at 3-4
So at 2.40 I was upstairs getting dressed for public consumption (I had started work at 7am at the computer, but that didn’t mean I was in a fit state to open the front door. Lol)
then the doorbell went.
The rapid stair descent did something ‘orrible to my gammey knee, and I was VERY unimpressed to open the door to find 2 Tescos deliverers (one a trainee) crowding the doorstep, having dumped all our shopping on the ground, 20 mins early.
No phone call, no social distancing, and the trainee was obviously being trained to sloppy standards.

Am considering a complaint.

Because of wrecked knee it then took 40 mins, using crutches, to get shopping into kitchen and packed away. Which left too much of it sitting in sun on doormat, for too long.
