I do weigh most stuff, though often estimate regular (low energy density) foods. For example, I weigh avocado or chicken but guess with tomatoes or cucumbers.
For example, on 13/11 - 46g porridge, 141g unsweetened almond milk, 41g blackberries, 20g blueberries, 8g walnuts
(268 Cal / 33.4g Carbs) calculated on cronometer.com.
I do try to keep pasta and rice portions quite small and often only have half a banana, but generally think things are pretty accurate. My biggest error is probably underestimating oils used in cooking (though in a consistent way) and losing track of drinks when having a few wines.
