I find some kinds of German sausages very useful. Unlike English ones, they are pretty much carb free.
We're having Bockwurst this evening and we have Frankfurtrers about once every couple of weeks[ I buy the imported ones in jars]. I like English sausages too and buy some 85% meat ones from time to time.
I saw Giogio Locatelli making a pork dish on TV yesterday. I'll not use pigs snout or ears, but I'll do a watered down copy with 85% pork sausages and some belly pork. It should taste Ok
