Low Carb Recipes!!!

I was craving something sweet and found these recipes. I thought maybe some of you would like them! Enjoy. :)

Yellow cupcakes
Prep: 20 minutes Bake: 12-15 minutes Oven temperature: 350 degrees fahrenheit
2 1/2 cups flour
3/4 cup stevia (splenda works too)
1/4 cup sugar
3/4 cup unsalted butter (softened)
2 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup buttermilk
3 eggs
2 1/2 teaspoons vanilla extract

Nutritional Information for one cupcake
Calories 160
Cal from fat 80
Total fat 9 g
Saturated fat 5 g
Cholesterol 60 mg
Sodium 170 mg
Total carbs 16 g ( I think net carbs is around 6 g )
Fiber 0 g
Sugar 4 g
Protein 4 g

Chocolate Chip Cookies
Prep: 15 minutes Bake: 10-12 minutes Oven temperature: 350 degrees Fahrenheit
2/3 cup butter
2/3 cup brown sugar
2/3 cup stevia
2 teaspoons vanilla extract
2 eggs
1 1/2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup semi sweet chocolate chips

Nutritional information for one cookie
Calories 100
Cal from fat 45
Total fat 5 g
Saturated fat 3 g
Cholesterol 20 mg
Sodium 95 mg
Total carbs 12 g ( I think net carbs is around 7 g)
Fiber 0 g
Sugar 6 g
Protein 1 g

soaps on telly and people talking about the characters as if they were real.

however I wouldn't at anything wih a carb count of 16 for 1 small potrtion. these are obviously American recipes [cup meassures and "net carbs"]
I am very careful with flour.
However, I'm making low sugar chocolate mousse for Sunday dessert.

What has happened to me, I see a couple of recipes i haven't seen and I do a mental happy dance, it's like finding a tenner, I need a therapist.

I agree with you Dr Hana, the OPs muffin recipes are not particularly low carb, if I ate one of these my bg would be up in double figures!

Here are two low carb recipes, tried and tested.

Chocolate Muffins

100 g ground hazelnuts

100 g ground walnuts

80 g melted butter

80 to 100 g dark chocolate (preferably 86%)

sweetener equiv to 1/2 cup of sugar

seeds from a vanilla bean (or equivalent vanilla extract)

120 g cream cheese

3 large eggs (or 4 small)

1 heaped tsp baking powder

Mix the nuts together. Melt butter and chocolate together over low heat. Whisk together eggs, cream cheese and sweetener, stir in the melted butter and chocolate, finally stir in the nuts, mix well.

Taste the mixture, you might want to add more sweetener. Fill into muffin cases, bake at 180 degrees for 15 - 20 minutes. Leave to cool before eating.

Former moderator Louise b's Blueberry Muffins recipe:
250g ground almonds
1 Tbsp baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
vanilla essence/extract
a squeeze of lemon juice
150g unsalted butter , softened
15g of sweetener of your choice
2 large eggs
200ml greek yogurt or soured cream/creme fraiche
120g blueberries

combine the ingredients just as you would any muffin mix and divide mixture between 12 muffin cases and cook for about 25 mins on on 180.

Braised Balinese Duck

Peel lemongrass and then crush, mix with garlic, shallots, ginger, chilli, lime juice, corriander and cumin seeds, cloves, cinnamon, nutmeg and turmeric, shrimp paste or fish sauce, salt, pepper and sesame oil. Blend it and cook the paste on a low flame for 5 mins. When cooled, rub it into duck breasts generously and leave to marinade for an hour. Place on a baking tray, cover and cook at 140 for 90 mins to 2 hours.

Serve with brown rice which has been boiled in vegetable or chicken stock and to which lemon zest and juice have been added along with some thyme.

Slice the duck breast and place on a bed of the drained rice and pour over the spiced sauce.

Pull up chair, put feet on stool, eat whilst watching TV with a nice cold beer.

I claim that tenner that you found. :D

I tried similar recipes but was also worried about the white flour. With that in mind I switched to wholegrain spelt flour and added oat bran. It sort of worked, I used blueberries and it was possible to get a spongy texture but it tasted course and grainy. Something wasn't quite right.

So, I cut out the sweet tasting stuff and replaced with grated pecorino cheese and had something akin to a low GI cheese bun/scone cross. Sliced and with a little butter, they made a wonderful savoury snack. Tried the same with added sundried tomato. Again, great savoury snack but now with the sweetness of the tomato.

These recipes are GREAT as I am the ultimate Cookie Monster but since having my blood test results as 100 (!) I really need lower carb sweet treats! I'm type 1.

Another chocolate muffin recipe, works out at 5 carbs per muffin.

120g softened butter
25g Splenda or your preferred sweetener, taste the mixture
4 Eggs
120g creme fraiche
2 tsp vanilla essence or extract
75g ground almonds
50g coconut flour
25g cocoa powder
1 slightly heaped tsp baking powder

Mix all the dry ingredients, in another bowl mix all the wet ingredients. Slowly add the dry mixture until both are fully combined. Divide into 12 muffin cases, bake in the middle of the oven at 200C, gas mark 6 for around 20-30 mins, ovens vary, so its best to test with a skewer or knitting needle, when it comes out clean they are done.
