You can buy toasted coconut in health shops, H&B.
If you like the taste of coconut have you tried to make a kind of 'white chocolate' with it?

Just granery toast for breakfast with skim of butter. Coffee with skimmed milk.
Lunch: to small pieces cananberre with apple peach and grapes +tumbler of carbinated water. Later snack i have a few almonds.
Evening meal. Sweet pot mash assorted veg haddock poached in skimmed milk. Baked apple and yoghurt.
Yum yum.

Melt one packet of creamed coconut over low heat until soft and creamy (dont overheat it). mix with 200g coconut oil or even better would be organic cocoa butter (<< really does taste chocolatey!), scrape out a vanilla pod or use vanilla powder, sweetener to taste, stir all ingredients together, pour into chocolate moulds, leave to cool in the fridge or freezer.

Breakfast 2 hard boiled eggs

Dinner 2 boneless chicken thighs and veggies


Had lots of water and 2 coffees with unsweetened almond milk and 1 cup of bouillon

Goodness I feel quite the porker after reading what everyone else eats...

Today I had
Full fat Greek yoghurt with double cream for brekkies (breakfast bowl was almost full)
Salad of cheese, tomato, cucumber, celery and mayo, plus a bowl of strawberries and double cream... couldn't eat it all so half the salad is in the fridge at work for lunch tomorrow
Bacon and Eggs, followed by yoghurt, double cream and coconut oil/peanut concoction for dinner

Think I might have eaten too much as my tummy is a bit full... oops!

I liked to eat pure coconut cube as they sell in caribean shop:) beck in time, thinking what i was craving for, it finally could give me signs of something is wrong. in last two years i loved to eat :tomatoes, garlic, onion,buchweisen,or white yoghurt. onion and garlic i could eat tons of it. now i see why i craved it.

today i felt good without no hungryness and no signs of hypo.i dont know why.

breakfast- brown rice with beans brocoli and cheese
peace of bread with garlic butter
few wheat and rye crackers
dinner brown rice with tommatioes and tuna.
drinked quite lot green tea today.

Breakfast was one slice of bacon, half a tomato and half an avocado and a fried egg
Lunch was a plain (no dressing green salad with some roast chicken
Dinner was homemade asparagus soup with a little fresh cream and three slices of left over boiled bacon

Eating LCHF and loving it
T2DM aiming to get A1c back into normal range soon

hi i am also classed ans a new diabetic yesterday ,, i reaaly dont know what to eat ,, just fruit and veg how boring and i dont like fruit or veg much i hav never eaten a lot of it ,, last night what i eat i didnt like it is vvery confusing what to eat

Soups and stews with meat, veg and low GI foods like pearl barley are tasty, filling and nutritious. By adding spices to them, you can make them a little more like a chinese or an indian.

Fish works especially well for me. If I ate only fish, I'd be permanently in the 4s. I like fish like herring, on full corn breads. This is a cold herring salad with beetroot:

Buchweisen? Do you mean buchweizen, buckwheat? What do you do with that? Despite its name, it's not a grain but it sounds as if you can use it like one?

Mmmm, I like buckwheat too, always used to make a buckwheat tabbouleh as a side dish when we barbecue. I just found this recipe http://www.tarladalal.com/Moong-and-Buc ... chdi-3506r which looks interesting, might try it as an alternative to rice for my next homemade curry, tried cauliflower rice and it was ok, but I'm never going to be a lover of cauli

Yesterday:
Breakfast: Greek yogurt with Linwoods flaxseed concoction, toasted coconut and blueberries.

Lunch: Prawn mayo and lettuce roll, 1 nectarine

Afternoon: few walnuts/almonds

Dinner; Aubergine bake with Focaccia to mop up the sauce - DELISH

Bedtime: Cointreau truffle

Everything home made and low carb of course

tea with lemon, coffee with cream, loads of water during the day

Hi Mrs Jet,

I find that cream in coffee leaves bits on the top that reminds me of stale milk, is this something im doing wrong as it puts me off?
