Hi All,

It's November, and Christmas is getting closer.

I don't know about you, but I want to really enjoy fabulous food over the holidays, while staying as low carb as possible.

Anyone got any gorgeously indulgent seasonal recipes?

LC versions of
Chocolate truffles?
Xmas pud?
Cheese straws? Footballs? Twiglets?
Rum/brandy butter?
Cranberry sauce?
Eggnog?
Mince pies?

My mother has a recipe for choc truffles which is amazing.
As good as any that I've seen on sale anywhere.
Basically just cocoa powder, icing sugar, double cream and a smidge of brandy/rum/Cointreau...

I will try and find it.

Powdered erythritol, and I am good to go...

:D

My mouth is already watering at the prospect of a mince pie...
That's why I need the extra time. Need to find, test, and perfect the recipe. :wacky:

Looking forward to the recipes myself... @Brunneria: if you find any good ones be sure to put them on here. I hate the way my blood sugars go over Christmas with all the carb-rich food. :grumpy:

Such is my dedication, I sampled these today:

They are lush.
VERY pleased with them.
Of course, I had to tweak. I used more cheddar, and added horseradish (no mustard in house! :wideyed:)
And mine are chunky, not these elegant slivers.

Very nice indeed.

Might add onion next time.
These look fab. Are they chewy or crunchy like breadsticks? Will need to get some arrowroot starch and give them a try :)

Anyone ever made low carb chutney? I'm really missing it with my cheese :(
I have cooked red onions down for ages with a bit of balsamic vinegar and fake sugar. It's quite jammy and goes well with cheese. You could add walnuts and dried thyme to it for more texture and taste. (I want it now with a nice bit of Brie!)
