It looks like you are going to do some baking. I don't do much now, but the usual mix I used was ground almonds, coconut flour and golden flaxseed. I would probably use psyllium instead of the flax now. Keep the flax in the freezer as the oils go rancid, and grind it in a coffee grinder at the last minute.
Dessicated coconut is what I use most of now for occasional baking.

9 bars are a gf wheat free breakfast type bar made from nuts seeds. Loads of different varieties. Some even have chocolate! Some natural sugars in them but don't spike me at all. You can buy them in Asda, tesco and Waitrose. Usually on the "free from" sections. Some on here buy online in bulk if I remember rightly. I keep one in my bag for emergencies!

No idea about coeliac. I have my peanut butter off the spoon or on celery.
