Sounds nice, haven't tried cooking walnuts in an omelette....
Pretty sure green beans are ok.... the Low Carb version of this thread would be able to advise better I think though.....
The walnuts add a nice crunch to the omelette and go well with stilton:)

I eat them sometimes ...:)
I am,not a low carber ...
But I do eat low carb , medium carb , low sugar ... No sugar .. Low GI .... A diet I adapt to suit me ... Many variants I guess ...

Hello!
I am still a beginner, learning what is good for me and what is bad.

Morning BG - 10.1
Breakfast - cuppa tea, beans, soda-toast.
+2 hrs BG - 16.8. Sad that I might have to say goodbye to my beans!

Snack - Blueberries & strawberries with a dollop of Alpro yogurt

Lunch - Salad - ham, lambs lettuce, tomato, cucumber, and some popcorn.

Undecided for my tea tonight..

It could be the soda bread rather than your beans? Best you check out the thread of the same title in the Low Carb section if you are quite sensitive to the carbs (sorry I can't link you as I don't use it just know of it)

We can be a bit naughty sometimes with our food choices on this thread .... at least so far as the low carbers would probably think.... I eat to my meter so do medium/lowish carb but only low enough to keep my meter happy....and its so different for all of us..... portion control can make a big difference too.... I can eat toast for breakfast....so long as I just have ONE slice

so you, for instance, may be ok with beans OR soda toast but not both in the same meal...
Hope this helps....and good luck with your journey into beating diabetes

Easy-peasy. Heat some butter in a small heavy-bottomed saucepan, add double cream and bring to boil briefly to amalgamate and thicken. I added a wadge of swiss mint fresh from the garden and let sit to infuse. Squeeze out the mint and discard.

Thank you both! :D I had some soda bread the day before, and it hadn't really affected my levels, so I'd jumped to the conclusion the beans were the culprit... Today, I have had just beans and ham, and my +2hr reading was +1.3 rather than +6, so it probably was the combination of the bread and beans. It's interesting!

I want to try my best to have a balanced diet, I don't want to be on a "plan" so I'm hoping to find out that I can have moderate carbs rather than low carbs. We'll see how it goes!

Morning BG - 10.5
Breakfast - cuppa tea, beans, ham.
+2 hrs BG - 11.8 (much happier with this!)

Lunch - Left my salad in the fridge at home, twit.

Tea - Pasta Test..... Eek!
