Whilst I agree most turn to sugar (Polyols are an exception), but not all people deal with all foods in exactly the same manner. For example, I have always been able to eat oats and rice, in decent enough portions to make paella a credible meal option, whereas for others those can lead to a stratospheric blood score.

Obviously we do all choose where our tolerances are, with any food or any score, but the fact that x food returns a score of +y for you doesn't mean it would do the same for me.

Atkins bars largely use Malitol as the sugar alcohol sweetener. I react very negatively to Malitol in terms of BG effects and to be honest it is a scandal that malitol can be considered to not qualify as a "net carb" as it is the worst of sugar alcohols. I have read various reports on its GI being anywhere from 50-100% that of table sugar (sucrose). For example:

I personally steer clear of anything that primarily uses malitol as a sweetener.
