    What have you eaten today?

Today: Breakfast 2 poached eggs, tomato, cucumber and red cabbage with a spoonful of mayo Lunch Cheese salad, cheese, leaves, cucumber, tomatoes, onions, cabbage and seeds with an olive oil dressing. Not been hungry tonight as I have had a spectacular headache, think I am going to steam some...

    Which Juicer?

I have a Nutribullet and thoroughly recommend them. Since my recent diagnosis I have not been using it because of the carb content of the fruit. I preferred a mixture of fruit and vegetables but my favourite fruits were apple, pineapple and mango. Also I favoured veg such as beetroot and...

Avocados - unclear on carb content

So, am I right in thinking that you can deduct the grams of fibre from the total carb grams when measuring carbs? If so, fantastic

    Eating Out for a vegetarian.

I have had 36 years of compromise being a vegetarian in a meat eating society and have often eaten things I don't particularly like so as not to inconvenience my friends. I would rather have a plate of boiled cabbage than some vegetarian meals and the easy option pre diabetes was always a baked...

    Best oil for cooking

it would seem the trick is to use frozen cauliflower to deep fry. I found a recipe https://heartofacountryhome.wordpress.com/2009/03/25/deep-fried-cauliflower-florets-low-carb/

    Best oil for cooking

@Lenny3 have you considered mustard oil? I read that was a decent alternative to olive oil and more stable at high temperatures. Haven't tried it yet as I need to pop over to Edinburgh to visit some indian foodstores to purchase it. Oven cooked celeriac chips are very good although I marinate...

Sounds intriguing. Roasted cauliflower with garlic and lemon is amazing.

    lets talk about yogurt!

That is ideal @JACKTHELAD. I have an organic veg pack delivered which is mainly grown locally. I have asked them to drop the potatoes already and will now ask for carrots and parsnips to be dropped. They might drop me as a customer! I plan to put in some raised beds in my garden but now having a...

    Nigel's midweek dinner

Yesterday's Observer had a recipe for Baked Eggs with Taleggio and Greens. It has not hit the website yet or I would have posted the link. 125gr mixed green (kale etc) in boiling water for 1 minute, then drained and refreshed with cold water in a colander. Squeeze the moisture out. Beat 6 eggs...

    Eating Out for a vegetarian.

Another thing I didn't know, I thought Nando's was all about chicken! Funnily enough, I had a bag of mixed fruit and nuts in the car, purchased PD (pre diabetes) only to discover they were peanuts. I understand they are the least good nut. Now have a bag of brazil nuts in my handbag.

    lets talk about yogurt!

As a vegetarian I think meat is meat, which animal it comes from doesn't bother me, but I agree people need to know what they are eating. My main beef (see what I did there?) is processed foods and using deceitful advertising to convince us it is healthy and/or desirable. Hidden sugars in foods...

    New and Overwhelmed

Hi and welcome @Lucyhobbit , you have come to the right place for good advice and support. I understand your feelings having been newly diagnosed myself. Someone posted a link to the 7 stages of grief and related it to diabetes diagnosis and I found that helpful. I will attempt to dig it out for...

    lets talk about yogurt!

Interesting analogy @JACKTHELAD, 'your gear's been cut' as I consider the food industry as being very much the bad guys in this world and not dissimilar to drug peddlers.

    Eating Out for a vegetarian.

As you rightly pointed out @DeejayR , planning is the key. I am new to diabetes and that was yet another learning curve. It felt a bit like being a vegetarian back in the 1970s, sitting down with friends, reading the menu and leaving as there was nothing suitable. Surprised I have any friends left!

My favourite yogurt, shame I cannot have it with honey anymore. Raspberries and a pistachio topping perhaps?

    Eating Out for a vegetarian.

Most of these aren't allowed on a vegetarian diet! The food outlets available offered vegetarian food only with heavy carbs, even the veggie curry used sweet potato. I am trying to avoid pasta and particularly white flour pasta which is mostly served in these places. I would happily have a...
