    Cauliflower Mash

    You might consider using a cheese cloth to squeeze some liquid out of the cooked cauliflower, like when one is making cheese. I have not tried it, but it seems a plausible solution as to what I saw on youtube.

    How old are you and how long have you had diabetes for ?

    I am 66 now, and was diagnosed in June 2008 (thus 13 and a half years). I have diabetes in my family (Mother, grand-mother, brother and several cousins). My diabetes control was really bad until about 4 years ago, when I virtually eliminated carbohydrates from my eating regime.

    I notice from your profile that you are 83. Just my opinion, I don't believe at that age one should consider any food to be absolutely verboten. However, be cognizant that carbohydrate rich foods (sugar in all its forms, rice, potatoes, pasta) can play havoc with your metabolism and energy levels.

    Maybe we do things differently here in Canada, but every time I go for blood work, the battery of tests includes both fasting BG, as well as a1c. I always wonder why the doctor requests both tests, as the fasting BG can easily be manipulated, such as me giving me a fast working insulin injection...
