    Wholewheat pasta

Haven't eaten pasta for quite a few years. I have a spiralizer but recently bought a handheld julienne peeler which means turning courgettes into courgetti is so quick and easy in the microwave. I've even taken it with a courgette and a tube of homemade (leftover) Bolognese sauce into work when...

Making meals for me and my non diabetic children

I try and cater for a low carb (meat) option main meal then the carb version topping or side - pasta, rice or potatoes I give the family while I’ll have courgettie, cauliflower rice or cauliflower cheese. Yesterday I cooked a meatzza- mince base with pizza topping - they had chips and I had a...

Type 1: Pork Scratchings for stable blood sugar - T1??

Just found this and wanted to say when I eat chocolate - yes I know I'm not supposed to - but when the temptation let's just too much I have found eating cheese directly after stops my blood sugar from rising - must be the same principal of fat carb balance.

Type 2 To Snack Or Not To Snack

If I eat bread I know my sugar levels will rocket so snacks for me these days are a boiled egg or something like peanut butter or cream cheese on celery and I`m two stone lighter than at the beginning of the year.

Reversed T2 in 3 months diet only!

Ditch the wheat and cereal as it isn't about just sugar its the carbohydrates. You can have egg and bacon for breakfast or a yoghurt if you need something quick. No more sandwiches not even open ones. Have the ham, tuna or cheese you would have had in the sandwich with a salad instead or even...

Reversed T2 in 3 months diet only!

The Newcastle diet frightened me, I just didn't think I would be able to cope on so few calories and still look after my active 20 month old grandson. Then I found Terri Ann's 123 diet plan on Facebook. It's low carb and low fat and no expensive weekly fees so suited my pocket as well as my need...

    Alternative to bread!

I think both stuffing and bread sauce would work with the Lidl rolls really well. Just water and cream for the sauce instead of milk ? I wonder if the sauce might be a bit grey looking though?? I'll have to try this myself and take them with me to my Christmas Day and Boxing Day dinners with...

    Alternative to bread!

I've read that they are 8.5 carbs per 100g and the average weight is 115g so then it's 9.8 carbs per roll which is really good compared to the single slice from a little Warburton's loaf at 11 carbs ! I cut them into slices too.

    Alternative to bread!

I've recently started buying the Lidl high protein rolls. Only 9 carb per huge roll. I was concerned that with all the seeds there would be too much fibre but I'm fine and they are really tasty. I keep some in the freezer. Yesterday I took one with me to have out with soup - but had second...

    carbs?

If you are looking for low carb recipes then this link to a low carb diet site is good. Some of the photos of the foods don't look that appetising but then this isn't a commercial site. http://www.genaw.com/lowcarb/

    carbs?

You can add any filling like a proper quiche - just don't use wafer thin ham or it really will seep through.

    carbs?

I'm going to do some cooking with almond flour as it is very low in carbs. Not over struck on coconut flour but perhaps a mix of the two would be OK. I make flour less quiches. I line sandwich tins with foil or baking parchment and then make a "crust" laying ham over the lining and up the...

    carbs?

Cauliflower Cheese is one of my mainstays especially if I have to take a meal to work and I add bacon or ham to it as added protein. But I am still testing foods. I can`t eat porridge but yesterday I had my first Big Mac in months and I was 6.7 after 2 hours. I have read somewhere about net...

    Frustrated with Metformin

I couldn't take the gliclazide which I was given for the first weeks. It gave me headache as bad as a migraine and I was told to stop taking it

    Frustrated with Metformin

When I started my Diabetic Nurse told me to take the metformin gradually because of the diarrhoea issue. The first week 1 tablet a day, second week 2 per day and then finally 3 per day in third week. Each increased dose caused me a couple of uncomfortable days but by the end of each week I was...

    Leg Cramps

My sugars are down. I was 17.7 at my first visit to the Diabetic Nurse (no wonder they wanted me back at the surgery). But now I'm averaging mid 7s sometimes up in the 8s or down to 6s while I test which foods spike my blood sugar levels. Porridge cooked in water results in 14.

    What have you eaten today?

Sounds yummy. Would have to skip the mushrooms though as I've been allergic to them for years - turns my fingers into little sausages - but I've seen there is chicken egg foo young. Daughter and son-in-law are having Chinese tonight but I'm working !! Taking cauliflower cheese and some ham...

    What have you eaten today?

Just thought I would mention my last takeaway Indian meal . We don't have takeaways often so this was my first since being diagnosed in September. I thought I would have to grind up some cauliflower at home instead of rice but looking at the menu I went for tandoori chicken, cucumber raitha...

    Leg Cramps

Had a really bad night with leg pain. Have been looking on forum as I have already been changed to Atorvastin. But this morning my GP has organised another blood test and told me not to take any more Atorvastin (I've not taken any for a few days because of the pains). I've read that Metformin...

    Frustrated with Metformin

Cereal is a big no no for me. Even porridge cooked in plain water will spike me to 14 !!! Try a full English breakfast and you will be surprised how low carb it can be.
