Vegetarians: What have you eaten today?

B: Low GI wholemeal toast with Promite and peanut butter L: handful of macadamias and Coles choc-coconut icecream (11g carbs) D: eggplant moussaka with low carb potato and lentils I make a lower carb bechamel for moussaka and lasagne by grinding half a cup of raw cashews in a bullet blender and...

    Long grain rice

If you're going to eat rice, Basmati (particularly brown Basmati) is not lower carb, but it is low GI. If you're on a low carb diet, it's best to weigh your rice to make sure you're not overdoing the carbs per meal, and bulk it up with veg and protein. You can also blend it with cauliflower...

    Type 1 Carb addiction

It's alright to say that now, but you might think differently if that happened to you. I used to be a total carb addict, much like you, and going on a short-term keto diet actually broke my sugar addiction. It was hard to do, but worth it. My doctor thinks I might have been diabetic for a year...

Vegetarians: What have you eaten today?

No lunch for me today because I'm going out to a Vietnamese restaurant for dinner with friends and family and plan to have their incredible salt and pepper tofu and a big plate of stir fried veg. They do amazing cold rolls too. Here's a curry ramen with sesame tofu, roasted broccoli, and...

    Apple crumble

I find xylitol is best in baking, which is what I use in my crumble, but there's no need for much, since the fruit is naturally sweet. I wouldn't keep xylitol in the house though if I had a dog.

Newly diagnosed T2 - meds or not?!

That's very true, and so a second opinion can be useful, or seeing a doctor and/or dietician who specialises in diabetes. I was actually addressing Magneto's original post, not Resurgam's comment above mine. Sorry for the confusion but I can't believe everyone's piling on because I suggested a...

How long for BG to drop down

Caffeine can affect blood sugar, so that's one thing to consider if you're drinking 8-9 coffees a day. The Somogyi effect is another thing to look at if your BG is spiking when fasting. Most importantly, talk to your doctor, it might be that your medication needs adjusting.

    Apple crumble

Almond flour makes delicious crumble topping - it tastes a bit like those yummy Greek almond shortbreads, it's nice and crisp. I make apple and raspberry crumble and do a crumble topping with a little mixed spice, almond flour, walnuts, and a few oats as well. I serve it with cashew cream...

    Low Carb or Keto?

I've been vegan for almost 10 years. I have tofu, yuba (tofu skin), nuts and seeds (in cooking, not just as a snack, and nut butters), various meat replacement products, and beans and pulses like chickpeas and lentils, but I watch my quantities because they are higher carb. Things like low carb...
