Oh ive never tried sour dough - ill give it a bash. spelt flour sounds like the spell went wrongI'm tempted to have a go at sour dough, I tried spelt flour bread it ended up rock hard lol. I bought some sour dough from Sainsbury to try, got my hubby to slice it and it was very nice. And I split it into bags and froze it. Because some mornings I just can't face cooking bacon at 6am. I've had a few disasters with the ground almond breads but there's quite a few listed on low carb thread to have a go at.

Hello AnnieC! I don't know why the protein powder is used instead of flour, except that it is so low carb. If I find out more I'll let you know. I may experiment with the recipe to see if it works without. I think the "bread" is "risen" through the beaten eggs, so maybe it is just to add bulk? I have coconut and almond flours, so I may see what difference they make. Also, I am certainly not suggesting that this "loaf" be eaten every time my husband wants a slice of bread, just that if he's had enough carbs and still wants a slice with something, he can use this instead.This bread looks nice but I don't understand why it uses Whey Protein powder as flour replacement as that is normally taken as a drink by body builders weight lifters etc . I have asked before why it is used in cooking...a lot of recipes have it... but no one seems to know why when there are other flour substiutes but if the recipe asks for it they just use it I even asked in health food stores where they sell it and they said they had never heard of it being used as flour replacement in cooking They did warn though that to much whey protein without doing a lot of excercise but taken with normal food intake could be bad for the liver and even kidneys thats why I have always been wary of using it
