I'm looking for some advice about bullet proof coffee. I was diagnosed t2 in August and have been low carbing since then, losing 25 pounds and gaining control of my levels, keeping them between 4.5 and 7.0 most days. After Christmas I started to replace my breakfast with bullet proof coffee as the frozen fruit and full fat yoghurt that I was having for breakfast was giving me some spikes (I have since realised it was the lovely dark sweet cherries that were to blame, yum!). I make the bullet proof coffee with 1tbsp coconut oil, 1 tbsp of butter, a slug of cream and a large cup of coffee, rather than the 2tbsps of everything that the recipes often suggest. I reheat it at work and usually drink it in 2 goes, about an hour and a half apart.
I feel a bit empty at lunchtime, but often have no appetite so I may have some crustless quiche, some cheese, home made soup or some good quality hot dogs (my guilty secret!). I sometimes I don't have lunch at all. In the evening I have whatever I'm cooking for the rest of the family, minus the carbs, so lasagne without the lasagne, curry without the rice, meatballs without the spaghetti etc. I include veg but I'm aware that I do not eat as many as I should. I cook from scratch so I know the carbs are low. I snack on nuts, cheese, and a bowl of fruit and yoghurt in the evening. I haven't so far counted anything as it really switches me off.
I have about another 10 pounds that I'd like to lose, but since Christmas I have been on a stall. Not gaining, but not losing either.
My question is this. Enough fat or too much? I only use half the quantities that I should in the bullet proof coffee because of years of fat fear. Now I'm thinking I was right, and the stall is caused by too much fat. Another other part of me thinks that I should give doubling the fat in the bullet proof coffee a go and just see what happens. I don't purposely eat any other fat during the day, but I don't avoid it either. I love the bullet proof coffee and really don't want to give it up. Maybe I should leave the quantities as they are but drink it all in one go?
